Crab Salad dressing
I bought some crab meat last night; jumbo lump. I'd like to make a light salad (lettuce and a light dressing-not mayo based) I was thinking olive oil and lemon juice; what else would you add to the dressing? I was just going to to go with salt and pepper; but that seems a little blah to me.

There's a crab salad I've had in Mobile that's just a little oil and some minced or chopped white onion. Not much, mind you. Very subtle buta real way to enjoy the crab taste.

Pick one herb that you like and use just a little of that. A little lime juice would be nice, too.

For crab salads, I sometimes like adding some lime juice, cilantro, roasted red bell pepper, and avocado if I can get it (and feel like treating myself ;D).

How about adding a little bit of Dijon mustard to your dressing, that would be perfect. Avocado makes it even better.

to your olive oil and lemon why not add a tiny bit of scallions, fresh parsley,
and i agree a little lime juice would be great, too.... maybe stuff the avocado with it and garnish with tomatoes, etc..... all sounds good above.

Ooh I actually just had a good crab with linguine dish if you're into switching over to pasta..
Saute some butter and olive oil. Add white wine, tomatoes, and green onions. Let it cook and come to a boil. Then add lemon juice, parsley and cooked crab. Serve over linguine and you're done! How easy is that!
