Cooking Chinese Snow Fungus (tremella)
So I recently bought some dried Chinese White Fungus (aka Snow Fungus) which was championed by my Chinese boyfriend...and it turns out that he actually does not know how to cook it...LOL...any ideas?

Oh yeah, it's big in tong sui. Also snow fungus is sometimes used in savory soups or casseroles.

I have only had it in savory soups; my mom makes a wonderful soup with it. I love the texture! Delicate, but with a firm crunch. I should call her.... :D

trim the base and steep in broth or hot water until it blooms, say 10 minutes. add it to soup.

you can add it to stir fry dishes. just soak it in water, rinse, then mix with a bit of corn starch. add the fungus at the same time as the meat.
