Chicken Livers: Are yellowish ones OK?

My GF and I both love fried chicken livers. The hard part is finding good ones. My local grocery used to carry good quality frozen livers, but discontinued that a while back. They carry their own packaged livers, but it seems that most of the packages contain about 1/4 to 1/2 the livers that are very yellow in color, unlike the deep red that I prefer. My question is this: are the yellowish ones OK, or is there something (besides the color) that isn't right with them?

I wouldn't do it....

I'd ask the butcher why they were yellow, but whether or not I'd try them would depend on his answer. Actually, I'd probably go to another store and purchase your usual brand of frozen livers.

you have to be so careful about eating livers, i'd only suggest eating livers of free range, organically raised animals. the liver filters all of the toxins in the body.... need i say more?

yellow???? why don't you ask the butcher... maybe he can tell you.

or google it... i'm curious myself, now. maybe i'll google it.

I was curious about this so I googled. Yellow indicates a fattier liver, which you may or may not prefer. For me, personally? Liver? Ewww. But that's just me... = :-D

chisai is right.....the fattier the liver, the yellower it is.....ever seen a nice fresh lobe of foi gras?....totally yellow......

Thanks for all the help. I'm going to try it. I like fat on most everything else!
