burnt parchment paper

I recently started using parchment paper, especially when cooking breads. The parchment paper makes clean up a breeze, and helps protect the bread bottoms from my beat up baking sheets, but the paper always burns to a crisp in the oven! is that normal? it smells terrible when it burns.

Normally the only time I've found parchment paper burns is either heat in excess of 450* or when it contacts something greasy. Try to make sure your baking sheets are as nongreasy as possible. Maybe someone who bakes more might know.

The burning is normal. You are baking at pretty high temps after all. I use parchment paper to slide my bread off my peel and onto my baking stone. I pull the parchment out after ten minutes and do the rest of the baking directly on my stone. Even at that point, it's pretty burnt and almost smoking.

It has it's place, but one word: Silpat. That brand, not an imitator.

Burning is very normal at high temps. What you smell is the silicon treatment that is in the parchment paper.

Paper burns at 451F (hence the name of the book.)

as long as the burning is normal (and doesn't mean my oven is about to explode), i'm okay with it.
