Andouille Ideas

I'm looking for something "out of the box" to do with andouille. I bought some for gumbo or red beans and rice (haven't decided yet), but I'd like to do something different with the rest of it.

Any ideas?

My son introduced me to Rainbow Stew. The andouille flavors this colorful stew of chicken, chopped veggies, and beans. Recipe here:

I mix it with ricotta and parmesan cheese - salt, pepper, some herbs and bake in won ton wrappers. Exactly what I had for dinner on Friday night!

How about some Andouille Breakfast Tacos?

Ingredients

1/2 andouille, chopped
1/4 in. slice white onion, chopped
1/4 in. slice red bell pepper, chopped
1 clove garlic, minced
1 Tbs. butter
2 eggs
1 milk, 1/2 egg shell full x 2
Salt and pepper, to taste
1 dash Tabasco or other hot sauce, to taste
1/2 C. cheddar & jack cheeses
2 flour tortillas

Directions

Sauté andouille with onion, red bell pepper and garlic for 5 minutes. Break eggs into a jar. Fill one half of an egg shell with milk twice; add to eggs. Add Tabasco, salt and pepper. Cover and shake to mix. Add butter to andouille and veggies. Add eggs, and scramble. Turn off heat, add cheese and stir to blend. Heat tortillas (nuke for 30 seconds). Spoon egg mixture onto tortillas, roll up and enjoy.
