Cheese and olive platter. Proscuitto wrapped shrimp that my 12 year old has been making as his signature superbowl snack since he was 7. And little roasted new potato halves with creme fraiche and caviar.
And of course, chips and hot sauce. =)

Jalepenos stuffed with ranch cream cheese, smoked cheddar and wrapped in bacon.

I might try making that jalapeño popper dip someone posted recently, or my foodie-ized version of a local favorite: skyline dip. It is cream cheese topped with Cincinnati style chili (Sara Moulton's is a quite decent approximation) topped with cheddar and baked, then served with tortilla chips. The adaptation is skybites where you take a mini-muffin pan, make a cream cheese and butter pastry, fill it with a little chili, perhaps a bit of finely minced shallot (a nod to another way of serving Cinci chili) and cheddar and bake. Either way it's meat, cream cheese and cheddar. Should be popular.

This is my own, no-bake snack mix to die for.
In large bowl, combine:
17.9oz large box of Crispix cereal
2 boxes of Cheese Nips
1 box of Ritz Bitz with the cheese filling
Add nuts or whatever

I dont watch football at all but I will be helping out a friend that has a huge party at a bar she owns, I'll be making in addition to the regular stuff some oriental chicken wings, some scallop pops marinated in peanut sauce and grilled, and about 7 chickens marinated and grilled, (devil's chicken)

We have made this recipe approximately 8 times since November for different parties/events and hands down, people swarm the bowl, eat every single bite and scream for the recipe - it is definately our new specialty dish!!

As a displaced Steelers fan now living in California, we'll be serving up some serious Pittsburgh fare: pierogies, kielbasa & sauerkraut and some good old Pennsylvania-dutch pretzels. If I can find Iron City beer here, we'll have to have at least a six-pack on hand, though Californians can only take so much Pittsburgh, I suspect...

long time lurker, first time commenter...fresh (whole) jalapeños stuffed with cream cheese, cover them pork sausage and bake for 30 minutes at 450, so good with rotel dip!

Our crowd loves Hormel chil and cream cheese heated together. Sounds very gross but tastes pretty good- I think I'm going to replace it with the Jalapeno Popper dip and see what happens. Go Steelers!

I usually am good for bringing fresh guacamole (recipe from Saveur). We do kind of a pot luck for the superbowl because we end up having so many people, there are always wings, nachos, tons of beer and chili.

We like to eat the popper dip with Scoops - even though they show crackers in the picture.
We were going to have a party, but we were just invited to a huge tailgate party even though we don't have tickets - Tampa is only about 45 minutes away so I think we'll do that!

Ummm...Velveeta dip...
Velveeta, Ro-Tel and ground beef. With Scoops or those little white corn tortilla bowl things.
I might try to do buffalo chicken bites with boneless chicken...my 11-year-old son and I like buffalo wings but he gets annoyed at the lack of meat and the messiness. (Wish he'd get annoyed at the mess in his room...)

hungrygrl7, Believe me, I am toying with the idea of paying WAY TOO MUCH for the black & gold smiley cookies -- a pittsburgh icon if ever there was one. I was visiting friends in the 'burgh mid-december and my husband and teenaged daughters gave me the death glare reminder to stop at Eat & Park for a dozen smileys on the way home. I think they were happier to see the cookies than they were to see me!

I make SideSaddle Beans! (http://www.sidesaddlebeans.com ) A super easy recipe for the crockpot. Start it the night before and let it cook til its thick like chili. Serve it in a bowl with cornbread or ontop of hotdogs with sour cream and onions. A sprinkle of cheddar cheese tops it off for a easy warm SuperBowl Meal. Always a hit at my house!

I always do up some fried beef wantons with a few dipping sauces. Easy to make, but they go really fast. I can't make them fast enough. I would say that is my signature snack
I also smoke a pork shoulder, or a loin, along with some chicken wings(later boiled in Texas Pete & Butter). I have my own rub, and either of these can be considered signature as well.
I also make pizza quesadillas with my own sauce and thick sliced pepperoni(sliced by me and slightly degreased beforehand).
I thought of doing a taco bar as well this year, but I am not sure yet.

Lobster rolls.
Fresh lobster meat, mayo, diced celery, salt, lemon juice, teeny bit of sriracha or tobasco. Chives.
Pepperidge Farm rolls spread with butter face down grilled in pan. Hot rolls. cold lobster. Oh. My. God.

@missjess: I hear those things are incredible-people scarf them down when I make them (I mix in dry ranch mix). I can't hang since I don't like the taste of jalapenos. But, they do make the house smell good as they are baking. I was not asked to bring that to the Superbowl Party, oddly enough.
I was asked to bring some apps though. Here's what was requested:
Hummus
Guacamole
Spinach and Artichoke Dip (ala Alton Brown-dear god, that recipe is amazing)
Deviled Eggs

I haven't tried these yet -However the reviews were all 5 star on this puppy-and it's easy a cheap-Paula Deans "sweat chicken Bacon wraps" -you take skinless boneless chicken breasts cut into big bite -take bacon cut down the middle of package then wrap around chicken and sucure with toothpick-then you mix together brown sugar and chile powger--Put on a zip lock -shake -shake- shake-(Metro Station song in your head while you're shaking-or shake rattle and roll or shake your boogy thing or...just shake the ziplock not you --just wated to have some fun)--then place on baking sheet and cook in oven--check foodnetwork out for exacts -under Paula Deans Sweat Chicken Bacon Wraps---enjoy the party --Go Steelers or Cardinals--I'm just here for the party---tired of winter and want to see my NY Yankees---It's been a very cold winter this year (Connecticut)--
