What to Do With: Farmer's Cheese?

I bought some farmer's cheese to use as paneer for an indian recipe, and now I want to use up the rest of it. Any suggestions?

I was wondering if I could use it with some of the dishes I'm planning to make for superbowl, including stuffed jalapeno poppers (in lieu of or in addition to cream cheese) or in a baked mac and cheese dish.

I use farmers cheese in my homemade pierogies. It gives a richness to the filling with only a hint of cheesy-ness that adds an essential depth of flavor.
I think that it would be great in jalapeno poppers, instead of cream cheese. While not a Superbowl friendly dish, it tastes great in mashed potatoes, or on a baked potato. Maybe if you're feeling adventurous you could try a potato skins or twice-baked potato recipe for the game.

Farmers cheese is good on pizza too...

Combine 10oz. of cheese with 3 egg yolks, 3T sugar, 2t cinnamon, and a pinch of salt. Use as a filling for pierogi or blintzes, served with lots of sour cream. This recipe is from my Polish grandmother, and the subtle sweetness of the cheese mixture is always unexpected. I also mix farmer's cheese into mashed potatoes, along with onions sauteed in butter, a good scoop of sour cream, and plenty of salt and cracked black pepper. My boyfriend calls this the Polish Smash, and it's great with some smoked sausages.

As much as I like pierogies and blintzes, I don't think I would be inclined to make them in the next two weeks. So no one has an opinon on farmer's cheese in mac and cheese (would use other cheese as well for more flavor) I've also heard of using farmer's cheese as a subsitute for cotija.

I think it would work okay in mac and cheese, but its mild flavor might get lost, especially if you're inclined to mix it in with something stronger, like cheddar. I think it rocks in basics like omelets or grilled cheese & tomato sandwiches. Or, you can eat it like my family does- by the hunk standing at the kitchen counter:)

my grandmother fries up farmers cheese (its a russian thing). you add sugar, raisins and sour cream to it until it is a thick pancake-like consistency, with lots of chunks. Then form it into a log, slice it into 1/2 inch circles and fry it in olive oil. serve hot with sour cream on the side...not really an every day dish but sooo good. re-reading this makes me feel like my arteries are clogging up. but its ok, im only 23 :)

I just pan fry a couple of slices in a tiny bit of butter, it gets brown and a little crispy. Then put it on toast for a snack

i have made mac n cheese w/ just about all cheeses. if you are going for the custardy type baked mac stir the farmers in with your egg mix. if you are going the creamy/saucy way- make the white sauce base, add your harder cheeses then finish with the farmers.

Yeah I would like to use it as a base and then include sharper more flavorful cheeses.

Or since my friend gave me nearly carte blanche for cooking for his party maybe I'd do some kind of herbed dip, or spinach/artichoke dip. I am definetly liking the pizza idea now that I think about it more, maybe pair it with some roasted cherry tomatoes.

Since farmer's cheese acts kind of like feta but tastes mild, think Mediterranean maybe- zataar and olive oil, serve w/pita, hummus, olives.

noodle kugel... add farmer's cheese, cream cheese, sour cream, some eggs...
