Fresh is best. Dive right in as soon as it's made - it doesn't really need to "ripen".

I love it scooped up with baby carrots; slathered into a toasted pita with some sprouts and diced tomato; heaped on a bagel.....mmmm!

It's pretty good right away. You may like it better chilled, and it may thicken slightly after it sits in the fridge for a bit, but other than that, it should taste just as good when you make it - which means that if you're not completely happy with the taste when you make it, you may want to adjust the seasoning (salt, lemon juice, cumin if using, garlic, etc) right away. Enjoy!

i'm gonna try tahini and roasted garlic. i have it in the oven now.

depends on what you're adding....roasted red pepper, garlic, tahini, parsley, veggies...... olives.... anything added will take time to "marry" but most anything will taste good immediately.

well just some roasted garlic, and tahini. i have some soft pita bread to warm up, carrots and celery to dip in also.

I'm just about to eat tahini/hummus combined.....on fresh toasted pita --YUM!..Best to eat hummus is fresh and straight away..enjoy yours!

While you're awake. If you eat it while you're asleep, you'll choke. Seriously, there is no right or wrong time to eat hummus. They're all RIGHT.

I love hummus on a toasted english muffin for breakfast.

my oh my!!! i will never be happy with store bought hummus of any kind again. this time roasted garlic. next time roasted red pepper.

Welcome to the club!:-)

@dearrie - if you like sun dried tomatoes, rehydrate some and whiz them in the FP when you make hummus. Delish.

There is no wrong time to eat hummus. It's great when first made and stays good for a couple of days. I make it often. When it's in the fridge, my lunch and snacks are set for a couple of days. Lately I've been hooked on a bastardized version which I love. It's almost not even hummus anymore, but since its base is chickpeas, I still call it that. Chickpeas, sun-dried tomatoes, kalamata olives, olive oil, garlic, cayenne pepper, cumin, basil, S&P. Pretty much anything I dip into it tastes great.

i ate the whole thing. on to the next bowl.

i love it anytime of the day... just made or after sitting on the fridge or even room temp for a little while. I love eating it with pita chips, making sandwiches with it or even to make a nice hummus pastelon... something different and very delicious.

...Is anytime! Welcome to the club. :-) After I made my first batch, I vowed to not buy store made hummus. I thought mine was better anyway-probably because there was nothing added I couldn't pronounce.

I think it's great either way but I find myself leaning a little towards refrigerated for a few. Just to get the flavors to marry...

Enjoy!
