Tater Help Needed

I'm hosting a dinner party for 10 on Saturday at 6:30... and I have to work until 5. EEK. I want to serve roast garlic and sour cream mashed potatoes (yum), but I need a way to pre-cook, or at least pre-peel the potatoes without them turning brown and yucky. Any ideas? I was thinking of boiling them tomorrow night, and then reheating them to added the garlic and sour cream. Would that work?
