Still eating Stilton
One of our Xmas presents was a 2.5 lb. round of Stilton cheese with some Port wine. The Stilton came with a heavy glass dome and plate to store. How long can I store it? I will start to cook with it.
Maybe on Fillet Mignon as a sauce? What do you guys think...

Sorry, Filet Mignon. Sigh..

I would wrap it in plastic wrap and it should last fo about 3-4 weeks or you can freeze it for about 3-4 months. Stilton is good crumbled on a spinach salad with pears and of course bacon, in quiche, omelettes. What a nice gift.

I had good result freezing a lemon Stilton for a few months. I never cooked with it. Love it on a cheese tray.

Try it with fresh pears, stuffed on a celery stalk and anything calling for blue cheese. It makes a great cheeseburger. Wrapped in plastic wrap in the fridge it should keep for a good while.

Stilton is one of my favourite cheeses! There are so many different ways of eating it. It's absolutely scrumptious melted on a a slice of crusty bread, or just eaten on a cracker (best at room temperature). You can also sprinkle it over a white pizza, or crumble over a salad. I absolutely love Stilton stuffed mushrooms - sautee a couple of shallots in butter, mix with some Stilton, bread crumbs, s&p and minced herbs (like sage and thyme, or parsley), stuff mushroom caps and bake.
I've kept Stilton in my fridge for up to 5-6 weeks (wrapped in parchment paper, then in plastic. I'd change the parchment paper every couple of days or so). It can also be frozen - wrap very tightly in plastic wrap, then in tin foil. Defrost overnight in the fridge, it will be fine.

I am thrilled to learn Stilton can be frozen. But does it affect its texture? The only cheese I'm not afraid to freeze is grated parm. I also like stilton and crumbled bacon on a baked potato. Plus everything @brooke29 said. And @kathyvegas. And @pjracz10. Stilton is my very favorite cheese.

I made a Stilton and bacon tart for NYE that blew away our guests. The recipe was rather simple. From the London Times:

Caramelize some onions in butter with a little beer or port. Crumble Stilton across a pre-baked pizza crust and top with onions. Bake or grill until cheese starts to melt.
I'm going to make that now...
