Simple, exotic, healthy Valentine's meal
Valentine's is sneaking up on me! It will be the second V-day with my BF. My BF will eat pretty much anything, but we both love healthy food (hummus, curry, stir-fry). Steaks, mussels, potatoes, and any chocolate, apple, and/or peanut butter dessert are also faves.
So, does anybody have some ideas for a romantic meal that won't leave me harried from cooking over a hot stove or in the ER from using a clever! I'm a decent cook, and often experiment with new recipes. I'd love to make something that is not too complex (I'm just out of school, and my kitchen is tiny).

A steak sounds good -- drooling over filet w/ grilled salmon, pilaf, and asparagus.
If you don't mind coconut milk, mango, and Thai curries, I find Thai mango curry with chicken served with jasmine rice to be rather pleasing. A little heat is good, but not too much. Not sure if you'll find this milk overload, but Thai iced tea can be prepped easily as well - would suggest this prepared a day earlier if you want. The curry can be prepared earlier in the day and nuked/warmed at low heat, but it is also very simple to prepare together as well if you use the starter tubs of Thai paste (red/yellow/green curries, masamun, or panang...depending on the flavors you prefer - peanuts, shrimp, etc.).
Pad thai is also a very easy side to make. This does not reheat well unless you adjust for it when you initially cook it. As you know, rice sticks and bean sprouts become overdone quickly.
Maybe it isn't a good idea to try something new out. :)

How about mini beef wellington's with your steaks? I hate to say this, but I know Rachael Ray did a quick one - you might get some ideas from hers. They would be beautiful and delicious. In fact, I'm tempted to try that myself. I think it would be good with sweet potato fries or mashed potatoes and a green vegetable like green beans almondine, or roasted brussels sprouts or asparagus with a squeeze of lemon juice. I think I remember seeing a chocolate pecan pie? What man doesn't love homemade apple pie with vanilla ice cream?
I'm not into V-Day at all this year, but I'm always into great food and romance.

This is an easy dish, plus it's reddish pink. This is recipe for two.
Prepare 2 cup brown rice (two cups water per cup of rice) on low heat for 50 min to 1 hr.
With twenty minutes left on the time, cut one block of House brand firm tofu into cubes. Sautee in a tablespoon or so of canola oil on med-high heat until golden brown and a bit crispy. Cut up fresh broccoli and steam for six minutes on high heat (I do mine with a steamer basket over the stove). Throw drained broccoli in with done tofu.
Mix 1 tbl cornstarch, 1 tbl soy sauce (low sodium), 1/2 cup blood orange juice (you can juice 3-4 med blood oranges for same effect; the fruit flesh mixed with sugar makes a good dessert), 1/2 tbl rice vinegar, and 1 tsp of seasame oil. Stir well, oil will float. Pour most over tofu/broccoli on high; stir until it coats and coagulates. Put rest of liquid on the rice. Serve tofu/broccoli mix over rice. Viola!

I have a few ideas...
Baked Pasta w/ 4 Cheeses - this is not an everyday lean dish, but it's definitely an indulgence you can afford for Valentine's Day... and if your toaster oven goes up to 500F, you can definitely make it for 2 in the toaster oven. The sauce is pink, so it looks lovely and tastes absolutely delicious...
Pasta with Almonds and Goat Cheese - full of aphrodisiac ingredients and super easy to make.
This is my take on a french-inspired Nicoise Salad... It has many components, but they're not hard to make. Just cut all the vegetables and then assemble them in a beautiful platter. You can make it smaller so it will feed just the two of you. You can add a nice Croque Monsieur Sandwich... a fancy grilled-cheese you can eat with a knife and fork.
You mentioned you like desserts with apples... I have not tried this with apples, but following the french-inspired theme, these Roasted Pears with Blue Cheese and Hazelnut Praline are a hit... they taste like a restaurant dessert.

This is V-Day, why do you want to slave over a stove all day to become tired and smell of food? I would do a hot pot or fondue, finger foods that you could feed each other. You don't want to eat heavy, stinky foods that leaves you both too full and tired (save that for when you two are married for 50 years). Make it sexy, work it ......

I'm in with pjracz10-- something simple sexy and finger-friendly--maybe some marinated shrimp( pickled? maybe remoulade?) some oysters on the half shell with a cocktail or mignonette sauce-- fresh berries- don't forget the whipped cream, steamed asparagus with a come back dressing or remoulade sauce or maybe baby crab cakes with a garlic dressing/dip? seafood is usually fairly light if steamed or broiled-- you can compose the sauce or dip way ahead of time-- maybe, when he/she arrives, open the door in a sweet apron and nothing else-- as long as your neighbors aren't too close! then let your creativity and imagination get the best of both of ya'll!

Well, with a tiny kitchen, I'd say I'd prefer finger food to leave you unharried--great breads, spreads, different kinds of hummus, and lots of small finger foods--small brownies, apple tarts, and bite-size things if you have the time.
However, if you want the traditional 'man-pleasin' meal, some big baked or smothered potatoes, creamed spinach, maybe some fried eggs (or if you insist, any skillet or broiled meat like a steak or bacon), followed by brownies, cheesecake, and such, probably wouldn't be turned down, and would be easy to whip up.
