Portuguese Farm Bread

I found a recipe (http://www.epicurious.com/recipes/food/views/Portuguese-Farm-Bread-232275) for Portuguese Farm Bread that I would really like to make, but it calls for a food processor. Unfortunately, I only have a mini prep processor which will obviously not suffice. How would I make this by hand?

Mix the ingredients in a bowl until they are loose and crumbly. Use your hands to press the crumbs together. Start folding the dough over the crumbs and knead until smooth.

I make the bread machine "Son of a Cinnabon" like this all the time. Just make sure you knead until the dough is elastic.
