Recipe Request: Panini and Me
I love paninis, but I have found myself in a panini rut, eating the same one over and over again. I'm looking for some creative ideas! So tell me, what is your favorite panini? :)

1000 island (or ranch) baby shrimp, thin-sliced avocado, and Swiss
Shredded chicken, fresh thyme, caramelized onions, and fontina

or... prosciutto, provolone, tomato, and basil,
or... ham, brie, and dijon,
or... ham, swiss, thinly sliced red onion, and a little bit of rosemary?

hummus and grain mustard with arugula, sprouts and tomatoes
fried eggplant parmesan - fried breaded eggplant, fresh mozzarella, lettuce and tomatoes
gruyere and sundried tomato jam
gruyere and caramelized onions
swiss cheese, lettuce, tomatoes, mustard, pickles - my version of a veggie cuban sandwich

Sharp cheddar cheese, salami or pastrami, turkey, and veggie additions of choice. ^_^
