my boyfriend doesn't eat eggs.

I know. He's weird.

But I want to make him breakfast. Suggestions?

Do you bake? If so, you've got only a billion options. Does he eat pancakes? Waffles? There's another billion.

You tell us what he doesn't like - what does he like?

how about a nice hot cereal - steel cut oats with berries? bakery quality croissants or muffins with preserves? make him some homemade muffins with honey-butter or something. broiled grapefruit?

pancakes and waffles are always good...... but it's got to be real maple syrup....

Is this an egg allergy or a dislike? You can make pancakes, muffins, coffee cake, waffles and French toast without eggs. If it's simply that he doesn't like them straight up, you can choose any sort of brunch item. Veggie cakes, breakfast burritos, home fries, hash browns ...

One of my favorite books to gift is Morning Food by Margaret S. Fox. She used to run a place in California that specialized in breakfasts and brunches and the book has a lot of her best stuff.

A young friend of ours (who has Crohn's disease now) has an online moniker of EggsRDangerous. My son and I eat a lot of eggs (we follow UK philosophy which gives no limits like the US does) and on occasion we'll open a carton of eggs ... and find Haley has been here. All the eggs will have had little angry faces drawn on them with a Sharpie! ;-)

like chiff said, ya gotta give us more info--do you mean he just doesn't like omelets and eggs from a pan (over easy, and so forth)? In that case, there is still tons of stuff you can make. If he's allergic or vegan, or for some reason does not even eat pancakes, waffles, quick breads, muffins because they contain eggs, your options are more limited.

My suggestion would be to nip this thing in the bud right now and get yourself a new boyfriend.

Breakfast can be whatever you (or he) want(s).

While I don't mind cooking them for others, I'm not much of an egg-dish fan myself. Just finished the dishes from this morning's lazy Sunday breakfast--we had crispy bacon and sweet potato pancakes with a homemade gingered pear sauce. Egg-free and delicious!

This morning I made Mr Tomato Ina's Buttermilk Chaddar Biscuits and some left over ham slices I grilled with a Mimosa.
I have to recommend this recipe it was very light and offset the biscuits very nicely.

yeah - he just hates the taste of eggs. they're usually what I make for breakfast when I have a little time, and I was just looking for other options. something cute and homey to make in the morning before school. you know, more than cereal and less than grandma's old-fashioned dutch baby cakes.

How about a burrrito stuffed with hash brown (or some sort of potatos), a type of breakfast meat (chorizo, bacon, pork, ham, steak,), cheese and veggies, rice, or beans.
Menundo.
Traditional English breakfast minus the eggs.

My brother is also an egg-hater, but he likes bacon. So his "special" breakfast is a BLT. Seemed weird to me at first, but, y'know, it's just the breakfast standards of toast and bacon, with some tomato and mayo.

I can't stand plain cooked eggs either. (Strong taste aversion since, like, fifth grade. Even the sight of an omelet makes me nauseous.)

Pancakes are good, though. Also French toast, provided it's not too soggy in the middle when it's done. And waffles.

When in doubt, include bacon.
