In Search Of: The Sharpest Cheddar

Lately we've found that even though cheddars are marked "sharp" or "very sharp" that they just don't have the bite they use to have.

I realize that the mfgs. in this country are dumbing down on heat in some cases (just try to find a REALLY hot horseradish) but must we all sacrifice our taste buds? Any recommendations?

Yeah try the Cabot seriously sharp. It's good stuff.

The 10+ yeaar old Super Super Sharp Cheddar from Pinconning Cheese can actually be a problem if you're not careful. We left a pound of it in a vehicle once on a hot day. A few hours later when we opened the car door, the smell was so incredibly bad two people vomited! You might be able to order some via the printable price list. Just remember to keep it in a cool place ...

Cabot Seriously Sharp--it's awesome in sandwiches, mac and cheese and just on it's own. Ellie, our dog, says it's great by the brick, wrapper and all.

Another fan of Cabot. I also like Tillamook. I really agree with you about most other brands, sharp is not what I remember it being.

Cabot in our area has Extra Sharp (both yellow and white) and Seriously Sharp (white), I haven't tried their NY Cheddar, anyone have opinions on that?

Kerrygold has a sharp brand that comes in a black package -- sorry, can't remember the name. It's aged 2 years, I think. White in color, though you can't see the cheese through the black packaging, of course.

Aside from being very sharp, it has a wonderful overall flavor from start to finish. Take one small bite, savor it from beginning to end, and wear your O face.

cabot Seriously sharp is good... but not so sharp... I prefer the canadian cheddars with the crystaline formations in them.... now that's sharp..... and tasty!

Another very sharp white cheddar is BLACK DIAMOND. This was originally a Canadian product, but it appears that a cheese company from Wisconsin is marketing it in the states. It is a 3 year aged cheddar, with a good sharp bite. Had it tonight in mac n cheese.

Aged Canadian cheddar is very sharp and delicious. There are many microcheese factories that market it, but I don't know if they go state side.

I agree that Cabot's Hunter Seriously Sharp is very good. They also have a Vintage Extra Sharp version (I find it only at Costco) and a cheddar with horseradish - very good and spicy. I had only found that one at their factory stores in Vermont.
