Ideas for Using Pickled Daikon (Radish)?
Anyone have any ideas for how to use pickled daikon/radish. I am already thinking I'll use some for a bahn mi type sandwich. I'm looking for some less obvious and relatively simple suggestions. Thanks!

I love pickled vegetables (daikon, eggplant, cucumber -whatever the store has at the time) on cold soba with green onions and soy.

That's a great idea, thanks. I actually picked up some soba on the same visit to the Japanese market when I got the daikon).

minced up and mixed with ground pork for a gyoza filling.
