I Got a Bread Machine! I Need Suggestions

Which? Yay me! It's a Panosonic that was 60% off at Amazon today. I'd been thinking about it for a while, and this was so inexpensive after the discount that I couldn't resist.

As with the rice cooker a couple of weeks ago, can anyone tell me a really good bread machine cookbook? The rice cooker suggestions were great and I'm hoping I have the same luck with this.

Save yourself some cash and go to the library. You'll probably find at least 2dozen bread machine cookbooks there. At the very least you can see what's available before spending any money. Some of them are loaded with recipes what you'll never use.

@chisai - I got this very machine as a Hanukkah gift (and was really chuffed because my right wrist couldn't take any more kneading since I'm prone to tendonitis. I do feel like I'm cheating when I bake bread now:-), but it turns out just as good as it did when i did it by hand).

Try using the recipes in the booklet that comes with the machine, they are actually good. My first loaf or two, I followed them exactly, to get the feel of the machine, then I've started playing with them based on the bread I'd bake without it (by "playing", I mean mixing different flours, etc.). I thought of buying a bread maker book, but quickly decided against it. The booklet recipes are rather varied and allow you to "learn" the machine pretty well. Enjoy!

If your a homemade pizza fan, the bread machine does a fantastic job of making pizza dough.

I've had a bread machine for years and use it almost every week. Funny thing is, I've never baked a loaf in it. I only use it to knead dough. As mentioned above it does a great job kneading pizza dough and all sorts of doughs, including non yeast doughs like masa dough for home made Mexican tortillas. I truely love my machine because and use it often. As with everything else, there a loads of bread machine web sites and blogs to Google. I'd start there.

AMAZING.

Lots of people use the bread machine to mix, knead and raise the dough, then shape it as they like.

@Chelley - have you ever used the cinnabon recipe on copykat.com? I've made it several times - it's incredible. Makes a huge batch - enough for a crowd.

@Bread machine users - have you ever noticed a distinct difference between yeast labeled "for bread machines" vs. regular dry yeast?

@chiff, the bread machine yeast is supposed to be an instant yeast that can be added to the dry ingredients rather than needing to add it to a liquid ingredient first.

I think, somewhere, I read that the difference is that you'll have more live yeasts in the instant, so they can handle the less-than-optimal treatment and enough of them will survive.

@chiff - it's pretty much like db said, active dry (aka "regular") yeast has a larger particle size than instant (aka fast rising, aka bread maker) yeast, making it necessary to proof before using, while the instant yeast can be added directly to the dry ingredients. You can use instant yeast in place of active (you'll need about 25% less instant than active), but not the other way around.

I have tried both recs. I actually prefer the one on allrecipes, if you can believe that. I also do an overnight fridge rise, let them warm up on the counter for an hour or so, then bake them off. I also have a tendency to lean towards extra cinnamon in the centers!!!

I just use packages of dry yeast. I never buy the bread machine kind or anything like that. I noticed that the triple pack of yeast from Trader Joes is really powerful. There is a HUGE rise even in comparison to say, Red Star.

Also, I warm my eggs in a glass of hot water before adding them as well as either warming the margarine/butter with the milk before adding to the pan on any rec that I do.

I use mine mostly for mixing and kneading, raising dough as others said. Cinnabons, pizza, etc. It is great for pizza - put everything in before leaving for work in the morning and come home to dough for a quick pizza. Used to use it a lot for bread, but haven't in a while.

can anyone recommend a good whole wheat pizza dough recipe for the bread machine?

@psychsarah- do yourself a favor and try King Arthur white whole wheat flour for your attempts at whole wheat pizza. It has the some health qualities of regular whole wheat, but is more tasty than regular whole wheat in a pizza. Try a recipe of half white whole wheat and half unbleached AP flour.
