Homemade: Bacon Mayo

when making a mayonnaise from scratch, could you use the bacon grease instead of the vegetable oil?

has anyone tried anything like this before?

I've never tried it, but I would think the bacon grease would mess with the consistency of the mayo. Good Luck and let us know what you do and how how it comes out.

Bacon grease would be solid under refridgeration so I would imagine that your mayo would be kind of broken and mealy-looking...

Not mayo. But a real down-home take on hollandaise, maybe...? Find a "blender hollandaise" recipe and try it. With cider vinegar. On collard greens or something like that.

You might want to dilute the bacon grease with butter, though.
