Does Coconut Milk Freeze Well?
I've heard mixed things about freezing coconut milk, but I want to scale back a dressing recipe and it just seems wasteful to open a can and only use a bit of it. Any advice out there, please?

I've frozen it often. No problems using it later in a curry.

I've also frozen it before- it was fine. Not as good as right out of the jar, but it still worked well.
I've been looking at a powdered coconut milk online and debated ordering some in order to not have to open an entire can to use coconut milk.

I freeze it too, in ice cubes, and then store in a freezer bag. Not quite the same but does it's job in quick Asian sauces.

Thanks guys...it sounds like the frozen leftovers are best in a cooked sauce where the integrity of the initial texture isn't as needed as in a cold dressing.
@carrols~how much sugar syrup do I need to add for those pina coladas? Malibu, Captain's or Bacardi's?

Frozen cubes are probably great for pina coladas.
