Do you eat your vegetables?

How often and when do you eat your vegetables? 3 days a week? For dinner? Which ones do you eat most often?

It's the new year and I guess it's one of my resolutions. And I figure easy = more often consumed. So I want to find easy.

lunch AND dinner, dude. pretty much every day.

i eat carrots, onions, broccoli, brussels sprouts, spinach, kale, artichokes, romaine lettuce, avocado, jicama and potatoes pretty regularly during the winter. in the summer, i get sugar snap peas, fresh corn, tatsoi, green beans, tomatoes, and whatever else looks good at the greenmarket.

All the time, pretty much. I grew up eating lots of grains and vegetables - it was a shock to me when I learnt (in my late twenties) that apparently one needs to "sneak" vegetables "into those kids". We just ate them, and I continue just eating them. My snack can be a bowl of cherry tomatoes sprinkled with sea salt or some roasted asparagus. I don't think we ever have a meal that doesn't have vegetables in it. Soups, stews, sides, salads, quiches and pies, omelettes and frittatas, croquettes and pancakes - vegetables are everywhere:-).

Yes, tons of vegetables. Stir-fry is an easy way to have vegetables for dinner and also to use up the vegetable odds and ends that accumulate. We just had a delicious stir-fry with broccoli, cauliflower, onions, carrots and red pepper. Plus a little tofu. Yum.

Every day. Likely to be multiple veggies every day. Today included lettuce, zucchini, olives (or are they a fruit?), onions, red cabbage, mushrooms (fungus, but sort of like a vegetable), and I think I'm missing something.

In the vegetable world, there aren't too many that I don't like, although there are some I like more than others.

I serve them raw, steamed, boiled, baked, braised, grilled, fried, sauteed, stewed, poached, pureed....whatever.

I don't think there are any veggie-less meals around here, unless maybe it's just a quick sandwich, but then it's likely that there's a soup nearby, and those are always loaded with veggies.

I think vegetables are one of THE easiest foods to prepare! I think I eat veggies daily, or pretty close to. Do you do your own shopping? I walk around the store/farmer's market and see what looks good, if there are new things I want to try, I'll buy them and look up recipes online or in my cookbooks.

I usually plan a protein for dinner, than decide on two vegetable side dishes, or one veg, and a salad or appetizer that contains fruits or vegetables that compliment the protein.

I don't mind prepping vegetables so I buy fresh, but if you want truly easy why not try the frozen varieties, I haven't tried, but am intrigued by all the new steam-in-bag options out there.

Easy recipes: steamed broccoli, glazed carrots, steamed broccoli/carrots/brussel sprouts with almonds. gratins of any kind aren't the healthiest way to eat veggies, but taste awesome. Roasted asparagus. Roasted zucchini/tomatoes/mushrooms with olive oil and balsamic vinegar served with couscous.

I eat lots of veggies. Today was a low day for me. Just carrots and roasted onions, but for the most part, I hit the RDA on them, at minimum. I also tend to eat each thing on my plate, one at a time (unless mashed potatoes are involved, because I eat them with everything else on the plate smushed into them). Anyhow, veggies always are eaten first, as they're the first thing to cool down and I like my hot food hot.

One of my very favorite ways to eat broccoli is Hawaiian Island style. Steam them and make a dip of mayo and shoyu. Dip. Eat. Total deliciouosity. This, however, is something that unless you grew up with it, you will hate. And I love roasted vegetables, especially green beans. Grape tomatoes are one of my favorite snacks, just lightly sprinkled with salt. And edamame. Oh my. While I'm cooking them up I saute garlic and olive oil and dump it on top, with lots of salt and crushed red pepper.

Lunch- in a wrap and baby carrots

Dinner- my parents are asian, so we always cook a bunch of plain dishes. So there's usually a couple big bowls of veggies (brocolli, spinach, seaweed, carrots, eggplant, etc.)

The dogs and I all do. I generally go for carrots, broccoli, butternut squash, salad greens, tomatoes, and whatever I can get besides okra (texture issues). The dogs get a piece of fruit (apple or pear) daily.

I eat vegetables every weekday that ends in a Y. ;-) I love all veggies expect bell peppers (any color).

Lunch and supper, every day, except for broccoli - food aversion because of a childhood vomiting trauma...

@beth1 - I always chop some carrots, green beans, dill and/or parsley into my pups' food:-) Oh, and I drizzle it with olive oil, too.

today i went thru the fridge (walk-in) and had to make use of:
leeks, beets, carrots, parsnips, escarole, celriac, chinese broccoli, cauliflower -- i made a huge soup with lots of fresh ginger in it... pureed it... then i'll add some green curry paste, coconut milk, cilantro..... mmm....

I eat vegetables every day. If I don't get some sort of veg with every meal, I feel...unbalanced. I've been known to eat a side of green peas with pepperoni pizza; like that doesn't sound "unbalanced" lol

Mmmm, veggies. Gotta have them with at least two meals a day, and sometimes for snacks. Whatever looks good and is in season. On New Year's Day we had a big dish of roasted root veggies--carrots (white and orange), beets, turnips, sweet potatoes and onions. Yumminess.

@chisai--that broccoli sounds pretty good. I like mine steamed, then chilled, and dipped in home-made Italian dressing.

I eat some sort of veggies everyday in some ways or the other. I can't go with giving you what my favorites are (too long a list) so I will tell you what I don't like; beets and green peas, raw tomatos (I know, it' is really a fruit, but....) and okra unless cooked right.

I am a veg addict...if i dont get a few proper servings a day i feel raunchy. Veggies are probably my favorite food group. I went vegetarian a few times when i was younger but it's hard to maintain that lifestyle, in my opinion. Sometimes i just have to have meat.

@chisai - i grew up in the states but i have a mild obsession with mayonnaise and i have an aunt that's hawaiian...my family eats broccoli with mayo and soy all the time!

Oh yeah, a meal isn't a meal without veggies. Growing up my family embraced dark leafy greens and now that's how my tastebuds are programmed. Usually at lunch and dinner. I eat a lot of lettuce, spring greens, toms, baby spinach, red bell pepper, green beans, zucchini, carrot, celery, onion, broccoli, broccolini, choy sum, baby bok choy, kimchi. Less frequently, I'll have brussels sprouts, kale, collards, sweet potato, cauliflower, eggplant, turnip, radish, beets, arugula, mache. I tend to go with what is in season and a deal. Same with fruits. I can skip a rich dessert if I know I have a gorgeously ripe piece of fruit.

As for easy, I find that washing and spin drying in the salad spinner before storing in ziploc and other containers makes it more convenient and I waste less.
Almost any leafy green is good sauteed with olive oil, garlic, salt and a couple shakes of crushed red pepper with a squeeze of lemon or a splash of white wine or chicken stock. For an Asian twist, I sautee in oil, with garlic, splash of soy sauce, drizzle of sesame oil, pinch of sugar, sometimes a little crushed red pepper. During the summer, grilling veggies is a favorite.

Last year my New Years resolution was to eat more than 5 fruits and veggies per day. We have done a good job. If involves making sure I keep well stocked. I became hooked on fresh spinach which often becomes sauteed spinach and is still mighty good.

As a kid, veggies were regarded as punishment--as in 'you don't get any dessert if you don't eat your (usually poorly cooked) veggies.'

Now, as a vegetarian, a meal isn't a meal without veggies. Well, except breakfast perhaps, when I tend to prefer berries or grapes. I don't like the way a meal or even a snack tastes without a little bit of fruit or veggies.

I eat them every day at lunch and dinner, and often as a snack. I just mix them into everything.

I usually eat fruit with breakfast and veggies with lunch and dinner, and often snacks. I'd say my most popular list includes: spinach, bell peppers, carrots, cucumber, tomatoes, celery, brocoli, peas and mushrooms.

If you're looking for super-easy, find some high quality frozen veggies. When I'm feeling lazy, I whip out a bag of frozen stir fry veg, a few frozen shrimp and quick cook brown rice, and have dinner in minutes. It's obviously not as tasty as fresh, but if you find a brand you like, it's not too bad, and it requires almost zero effort for a meal with lots of veggies. Frozen peas are also the fall back in our house. If there's nothing fresh to eat with dinner, we make a bowl of peas. Good luck with your resolution!

Lunch: In alad, on a sandwich, in soup (e.g., tomato bisque, lentil and carrot).
Dinner: In salad, as a side dish (green beans with lemon and butter, roasted cauliflower), as part of the entree (e.g., vegetarian pizza, bean and cheese burrito with sauteed squash, fresh tomato and brown rice).

I love having veggies with breakfast, too, but there isn't time for that on weekdays. On the weekend I love to have spicy cheese grits with sauteed veg, or a western omelette, or just scrambled eggs with whatever vegetables I happen to have lying around thrown in.

Every day. Never met one yet that I didn't like, either.
My faves are Kale (ya think?), brussels, cabbage, zucchini, eggplant, artichokes, vidalia onions, cauliflower, broccoli, arugula, and mushrooms...though are those considered a veg, really, or just fungus?
One of the easiest ways to begin introducing more veggies into your diet is to have a plate of crudite with a dip that you especially are fond of (blue cheese dressing, ranch, green goddess, or even an italian dressing or the like) in your fridge. Any time you are jonesin' for a snack, reach for some baby carrots or broccoli or snow peas and dip 'em in your dip...

I used Swiss Chard in a soup I made the other night, from Sunset mag, it was fabooo, I eat veggies all the time, too much animal gives me the willies.

Veggies are my best friend
I particularly love: CUCUMBERS, celery, spinach, carrots, green beans, tomatoes, brocoli, mushrooms, bell peppers, avacado and corn.
I prefer all my veggies raw, this is how you make the most of them!
But if you prefer them cooked, steaming is for sure the way to go. It will cook them while still retaining its maximum amount of nutrients.

To tell you the truth dude, veggies are a great flavour filler for anything--plus you need'em. Add veggies to your rices, salads (of course), sandwiches (spinach or roasted reds), pastas, grain mixes, omlettes, soups...you can't ever go wrong really.

Vegetables are such a necessity for me that I have been known to come home from nice restaurant meals and immediately steam a bunch of broccoli. I have also been known to eat leftover roasted vegetables, sprinkled with hot sauce, for breakfast (although it's rare that there are leftover roasted vegetables, as I can demolish an entire sheet pan of cauliflower for dinner single-handedly).

I love all vegetables (and all fruits masquerading as vegetables, i.e. tomatoes, avocados, peppers, cucumbers, etc.) with the possible exception of white asparagus. I'll eat it if it's put in front of me, but the resemblance to pale human skin is just creepy.

@annatr - really? no white asparagus? OH NO!

I wish you could try my Oma's Weisse Schpagel Souppe--I'm sure you'd change your mind!!! Have you only tried them canned?
They DO look sort-of creepy human-ish soggy in a can--but fresh? To die for.

I must insist on giving them another try. There's a flavour dimension there that you can't find anywhere else!

@hungrychristel - I've actually only had them fresh, but maybe they just weren't good specimens? I've given them three chances, I think, and they've always been kind of woody and stringy. I'll keep trying (and would love to have your Oma's recipe!).

Pretty much every day in some shape or form. Not really fried, but sometimes steamed, sauteed, in stir fry, raw, and most popular in salads. Just however I really feel like it at the time I guess.

@annatr - Oh that's too bad!
I do know that you have to peel/chop the root stem quite a bit farther than a green asparagus because they develop a stronger outer-skin because they grow like a root vegetable underground. This might explain the woody/stringyness?

My Oma's off in Hamburg I should really try to get the recipe from her. But I believe that Weisse Schpagel Souppe is pretty popular in Northern Germany here's a really basic recipe but I know for sure that thyme is key in hers. You could also try cooking them with a cream sauce until tender.
When they come back in season (I think it's fall?), and you're feeling up to it; you should try them again but give them a really-good peel. :D Christel

I eat at least a dozen broccoli crowns every single day with my eggbeaters omelet for breakfast, more veggies for lunch (either a salad or carrot&celery sticks with a small sandwich) and always a hot veg with dinner...mostly green.

I LOVE certain veggies, which I gobble up regularly - spinach, broccoli, cauliflower, tomatoes, swiss chard. I have a salad for lunch or dinner at least 3-4 times a week - never with iceberg.

This is a total about face from my childhood preferences, when I was forced to eat greens. However, my parents were only occasionally successful - I have memories of sitting at the table for hours forced to stare at a plate full of cold wax beans, peas, and other stuff that came out of a can and absolutely nauseated me. And I can't eat Brussels sprouts to this day.

Yhea, vegs every meal, sometimes only veg. Fruit for breakfast.

I eat veggies everyday- cant have a day without some veggies in my plate! My absolute faves however is zucchini (#1 !!!), eggplants, really really ripe tomatoes, pumpkin, asparagus, broccoli, snap peas, fresh spinach , etc etc.

As strange as it may sound, but I realized Im very much tempted by green veggies and I get that same euphoric feeling off of them that I do from chocolate...!

My issue however is fruits- I almost never have any!!

If I didn't love meat and dairy so much, I'd be a vegafruititarian. I could almost live on the stuff. ;-)

......and, to answer your question......I don't discriminate. Fresh and frozen. The only canned veg I would eat is baby peas. Can't think of another off hand. I think they're all easy. Throw into soups and stews, raw out of hand or with dips or in salads and wraps, sandwiches & tacos, most of them taste great roasted or grilled or steamed. I put onions in nearly every cooked dish and raw in many others, but never just eat an onion. Asparagus is probably my favorite - even tastes good cold. I get cravings for celery. Occasionally fill it with cream cheese w/& w/out raisins, or peanut butter. And whatever would I do without the tomato? Raw on sandwiches & burgers, in salads, fried green, and sauces to name a few uses.

This is going to sound crazy, I don't mind vegetables I really don't, I'd just rather eat something else. The crazy part is, whenever I go to restaurants I always order vegetables over fries, particularly broccoli.

I always eat my veggies! Well, not radishes or green bell peppers.

One thing: asparagus is mostly a spring crop. There is a small fall harvest, but the main harvest is spring. (This is my favorite vegetable, so I know a lot about it.) For example, the thicker the stalk, the better the asparagus will taste. Asparagus produces the skinny (and slightly bitter) stalks when it is getting weak-- it takes a lot to push a fat stalk through the dirt. The only difference between white asparagus and green asparagus is that white is grown covered in straw; no sunlight, no chlorophyll. It is better to peel white asparagus because it does have a thicker skin. I peel it with a vegetable peeler by rolling it on the counter and peeling away from myself and toward the bottom of the spear. It goes really fast that way.

Another thing: asparagus will naturally break off where the tough, woody part begins. The stalks can be boiled and the strained water used to flavor risotto, soup or pasta.

I love my veggies....corn, peas, taters, brussel sprouts, carrots, onions, asparagus, radishes, broccoli, snap peas, cabbage, everything, though I'm not a huge fan of celery!

I tend to eat them mostly at dinner, but I do bring baby carrots to work.

I eat veggies every single day at dinner time! My favorite veggies have to be, spaghetti squash, eggplant, onions, leeks, cabbage, spinach, bell peppers, tomatoes & seaweed!
I get my 30 to 40 grams of fiber a day for sure! :)

I eat veggie tables all the time!!! I love vegetables especially those belonging to the green family. I would eat with every meal if I could but I consume them mostly with dinner whenever I cook dinner.

We have vegetables daily. If vegetables aren't on the dinner plate, someone makes a comment that is to be construed as, "Why aren't there any vegetable..." We make our own vegetable juices with a newly gifted juicer and have averaged three quarts per week for two people. Just last night dinner was a baked potato with dairy toppings and a tossed green salad. And no, we by no means consider ourselves vegetarians or candidate for that lifestyle.
In the juicer goes carrots, beets, celery root, parsnips and cabbage leaves and an occasional apple or kiwi. Fine mix! On the plate we are partial to green beans, frozen (not canned) peas, corn, spinach and broccoli.
Vegetable soups with just a hint of meat are fairly common here too.
We've tried the roasted vegetable trend but find it too much work and not that appetizing to our taste. Steamed fresh veggies in season are a sought after treat.

I eat vegetables by proxy. I consume lots of animals who have done the hard work of digesting those tasteless and leafy weeds for me. Efficiency is the name of the game!

I don;t eat vegetable vry much in a day unless I slip a slcie of tomato or lettuce on a sandwich but I do try to get in a veggie at dinner with a salad and a side of asparagus cauliflower or broccoli

Daily, not as much as I should, but I'm working on that this year too. Like others have said, stocking up and keeping supplied is the issue. I'm bad at remembering I have fresh produce, unless I've bought it for a specific recipe or purpose.

The biggest advantage to eating more veggies on the way to being healthier is you get to eat a LOT more for a small amount of calories, making it easier to fill up on good stuff and resist the bad stuff. I ate half a package of grape tomatoes today as a side dish for lunch (main dish was mushroom chowder from a mix) and 5 oz of grape tomatoes has only 26 calories!! But I was FULL, plenty full enough to resist the chocolate cheesecake in the copy room. =)

And roasted brussel sprouts are the bomb, though they are kind of labor-intensive if you do them sliced...there are a lot of those little buggers in one bag!

love my veggies--especially a new found favorite--dandelion greens!! All kinds of greens-try to get at least 7 types in a day -love escarole, broccoli rabe, spinach, kale, chickory and swiss chard--all good sauteed in EVOO and galic...also love mushrooms-all different types -and almost all other veggies--the list is endless
just roasted root veggies-brussel sprouts, beets, sweet potatoes, carrots, parsnips -drizzled olive oil with fresh herbs-rosemary, basil, thyme, s&p..
also made fresh minestrone last night--with swiss chard, squash (gray squash and yellow), escarole, carrots, celery , leeks, onions garlic in a tomato veggie broth....(with chick peas and kidney beans) YUM!

Every day, it would be disgusting to think of eating vegetables only a few times a week.

I'm a vegetarian. So, yes.

I love vegetables...like, to the point where I crave them. The other day I woke up with an urge to have roasted brussels sprouts. I thought about them from the moment I woke up until six at night when I finally had them. I love steamed vegetables with hot sauce on them. Broccoli, brussels sprouts, asparagus and mushrooms...my four favorites :)

I also crave veggies! Funny thing, I was craving roasted brussel sprouts the other day and had to have them..No one believes me when I tell them they taste soooo goooood when they're prepared this way!! Love it.....
