Corned Beef Hash: Way or No Way?
Way Way Way,
Any way, any day.
Haven't had it in ages.
Confession - there is a can of the stuff in the front of the pantry where I'm staying and I salivate every time I look at it. I had the canned cb hash nearly 40 years ago and I still remember that it was pretty darned good, for canned. Add a couple of over medium eggs and it's breakfast heaven. I want it!
You?

Absolutely WAY!
It is one of the few items that I'm proud to spoon out of a can. Truth is, if there were a row of breakfast cafes along the road, I'd invariably pick the one that has CBH on the menu.
You overcook your eggs. CBH has to be topped w/sunny-up eggs. BTW, don't even try to suggest ketchup :~b
I'd risk the friendship if I was visiting somewhere and there was a can in the pantry. Any good host would gladly replace their stock. If not, I wouldn't want to visit them again anyway ;~))

I have very fond memories of CBH from when I was a poor kid making it on my own. It's so filling and yummy! And I agree - should be topped with sunny side up eggs. Every once in a while I indulge in it, though haven't for a while... think I'll pick up a can soon!
allyn at 5:13AM on 01/26/09
You bet - it's good. Homemade is even better. I'll even order it if its on a menu.
Ribster at 5:44AM on 01/26/09
Total Way! I love CBH, love it. Not so much the canned stuff (though I will eat it in a pinch), but real CBH is wonderful. Stick a couple of eggs on top and it's heaven.
One of my favorite breakfasts used to be an egg/CBH/cheese sandwich that I used to get at this diner by my old office. It was also the first time I noticed my weight slowly inching forward. I saw a direct correlation, so quit that particular slice of morning heaven.
chisai at 6:22AM on 01/26/09
@chisai That sounds so good. I can see that being a concoction made famous at a neighborhood "stainless steel" diner at the edge of downtown Boston. I'm going to try that but for health reasons, probably just once. I'm imagining the cheese sandwich to be grilled; am I right?
czken at 6:38AM on 01/26/09
Husband would say WAY, with two thumbs up. Me, NO WAY, two thumbs down. In fact, the guy running the "big grill" would sometimes nudge me (toast master) when there happened an order for a dry english muffin and cbh with onions...usually my then boyfriend's request who was running the "small grill" on the other side. And yeah, I married him despite that character flaw. Ah, weekends at the diner, many, many years ago.
dhorst at 7:14AM on 01/26/09
Way! I've never tried the pre-assembled out of a can, but have fond childhood memories of leftover potatoes combined with a rectangular can of corned beef topped off with over-easy eggs.
I found canned corned beef in the store yesterday (woohoo!) and just had to buy it since I am going through another one of my "nothing sounds good" phases. Corned beef hash for brunch tomorrow!!!
cowprintrabbit at 7:44AM on 01/26/09
@czken, it was all piled on a warm kaiser roll, the inside toasted. Hmmmm. You know, this is totally making this morning's breakfast pale in comparison.
chisai at 7:45AM on 01/26/09
I am so surprised at how many WAYs there are. I cringed at the title because I like corned beef hash and roast beef hash. Fried Spam somehow isn't a guilty pleasure, but this sorta is - not sure why.
I cook the corned beef hash in a frying pan layered as thin as possible so I get a crust, not charred, with some fresh ground black pepper. With a scoop of hot rice and a crumbling wedge of corned beef hash, I'll crack an egg, remove the white, and plop a yolk over it. The yolk gets slightly cooked, becoming oozingly thick.
Sorry, I do eat it with a squirt of ketchup and Kewpie mayo, and sometimes sriracha, though...
*sigh* Need to add this to the list on the "Got Craving?" thread. Thanks, Perky! Oh, you started that one too!! GAH!
Cassaendra at 7:56AM on 01/26/09
Way I love to have it like you Perky with two over med fried eggs on top. If I don't have any eggs then I like to mix some salsa and cheese into it while it fries and put a dollop of sour cream on top. No matter how I have it I like it crisp. Yeah some of the canned stuff is pretty good, it's been 1000's of years since I 've had it as well.
Now the BF likes his eggs scambled and mixed in with the hash.
pjracz10 at 8:05AM on 01/26/09
Way for sure - I put mustard on mine (learned that from my ex-husband who is also a corned beef hash person!)
Maureen at 8:43AM on 01/26/09
waaayyyyy with poached eggs and toast... my college roommate and i made this almost every weekend one semester 'cause its super cheap!!
hungrygrl7 at 8:46AM on 01/26/09
Way. I love it but feel terribly guilty when I eat it - like people are judging me. But now that I see so many others who also enjoy it, I will eat it with pride.
LHSK12 at 9:22AM on 01/26/09
WAY! I fixed a huge corned beef the other day and I was just thinking of making hash with the leftovers if I can pry SO away from them. lol I'll even eat the canned stuff if I cant have homemade but I hate ordering it out, even though i do, because sometimes its super delicious and sometimes its the most vile mush on the planet.
huneybumper at 9:23AM on 01/26/09
Oh, WAY! In our house it was called, "Cowboy Hash" - my two boys wouldn't eat it until the name was changed, then suddenly, it became their favourite - it was one of those easy "breakast for supper" meals that I made with leftover potatoes, and the Argentinian canned corned beef - thanks for the trip down memory lane - I think it is time to get reacquainted!
bareneed at 9:43AM on 01/26/09
Way! I haven't had it since I was little (my Mom used to make it for us as a "treat" - probably it was a way to save money), but now I'm really craving it.
Junie at 9:45AM on 01/26/09
Oh Way with two eggs over easy any day every day.............
Markbb at 9:46AM on 01/26/09
Definitely WAY! Served on English muffin halves and a sunny side up egg on each one.....and if I need a little wakeup, sriracha!
calliope at 9:55AM on 01/26/09
WAY! With poached eggs, absolutely.
bessfour at 10:20AM on 01/26/09
WAY! Poached or over easy eggs with a bit of ketchup (ketchup goes on eggs, not on hash, so please don't start throwing stones at me:-)), over corned beef hash is one of my favourite weekend breakfast, even though we haven't had it in a looooooong time (but I'm quite certain I could eat it every day). I think I've tried the tinned stuff once, and I wouldn't terribly mind it either. Not at all, come to think of it!
brooke29 at 10:34AM on 01/26/09
WAAYYYY! But only the homeade stuff. The canned stuff tastes and smells like dog food to me (sorry, but that's my opinion...).
I recently went to a local eatery here that is known for their awesome big breakfasts, and I saw corned beef hash on the menu and got all excited and ordered it. What came out to me clearly was the canned stuff, and I was so disappointed that I wrote to the manager of the establishment afterwards, chiding them for their choice. I mean really, how hard is it to make and serve the homemade stuff, which is clearly more desireable both in presentation and taste. He wrote back and told me that he came from NY (we are in ATL) and when he first opened the place down here he served the homemade stuff, and nobody liked it because it was "unrecognizable" to his patrons here. So he went back to the canned and sales went up. I was floored.
Needless to say, I don't order their corned beef hash anymore...and when I've got a 'jones' for it, I make it myself...with a poached egg on top!!
juliebugsmama at 11:25AM on 01/26/09
Mmmmm, I love CBH (canned or homemade) with poached eggs on top. Haven't had in quite awhile 'cause it's so fatty. I do have fond childhood memories of having that for dinner on cold winter nights when my dad would cook.
AStern at 11:54AM on 01/26/09
Way!!! Even the tinned stuff, as long as it's cooked crispy. (In fact, this is one of the very FEW tinned foods I will eat.) Yes also to the eggs on top. My father and I used to 'indulge' in this every month. Sometimes I would make it from 'scratch', and sometimes from a tin. Of course the 'homemade' was better but I still like the tinned stuff too. Now, each time I eat this I remember my father, who died a while back, so it's now a 'sentimental' thing as well for me. (Especially since we were the only 2 in the family who liked it.)
Carolina de Witte at 12:09PM on 01/26/09
Definitely way. Unfortunately there are not a lot of places in my area that have corned beef hash let alone a good version.
FrostyGhost at 1:41PM on 01/26/09
Waaaaay! I love REAL corned beef hash. What a great way to transmogrify left overs.
There's a place in Jersey called Harold's NY Deli that serves a PILE of hash, family style. It used to be really good but it seems to have lost its lustre the last few years.
Of all places, Bob Evans makes a pot roast hash and if you can get it fresh in the morning, it's outstanding. BE was the only place open at 6:00 a.m. and I was starving on my way out of town. It's not the same later in the day. It tastes like it's been laying around.
True CBH is outstanding and in no way resembles the pinkish gray goo and potato-like pellets sold in a can. Bleah.
therealchiffonade at 1:49PM on 01/26/09
I've never eaten corned beef, let alone corned beef hash.
Can I still be in the club? LOL.
lo82070 at 2:27PM on 01/26/09
@lo82070: Infidel! :)
Cassaendra at 3:12PM on 01/26/09
ok folks I've got 4lbs of leftover corned beef and I'm making hash, anyone wanna come for dinner tonight? btw its byoe (bring your own eggs) ;-)
huneybumper at 3:52PM on 01/26/09
Way, but I' always afraid to order it out thinking its the canned "fake" stuff. I did order it once and it wasn't even cooked on the griddle. I make corned eef so much, next time I will save some for some scratch hash!!!! Oh yeah poached eggs a must on top.
joanpieroni2 at 3:55PM on 01/26/09
@huneybumper ~ I hopped on a donkey (or is he a jackass???) and will be there in short order. Have eggs, will travel.
PerkyMac at 4:02PM on 01/26/09
@huny - eggs and I will be arriving shortly! We'll pick Perky on the way, I promise!
brooke29 at 4:12PM on 01/26/09
Grrr, huney, I'm so sorry to have misspelt your name! Stupid, stupid keyboard!
P.S. We're still invited, right? (hopeful puppy eyes)
brooke29 at 4:13PM on 01/26/09
@lo82070 ~ if you've never ridden a jackass at 70 mph, get ready for the ride of your life, 'cause we're riding bareback to huneybumper's for your first taste of corned beef hash. your life will never be the same.
@brooke29 ~ you got your jackass hitch, right? we're ready to be towed! Bloody Mary's on me, soon as we git to huney's. I've got plenty for everybody!
PerkyMac at 4:39PM on 01/26/09
@ huney - Yummy yummy yummy I will have hash in my tummy .....la la la.
pjracz10 at 5:42PM on 01/26/09
@Perky - yep, I'm all set, jackass hitch, eggs and all. See you in 5.
brooke29 at 6:29PM on 01/26/09
Way, way, way! It's a guilty pleasure that I haven't had in years, since I last snagged some at a buffet breakfast.
MMinNYC at 6:39PM on 01/26/09
anyone want to share their recipes for homemade cbh? I just made 2 large CB roasts yesterday and have about a pound leftover.
MamaT at 8:04PM on 01/26/09

huneybumper at 9:03PM on 01/26/09
meat raffle anyone? i know where you can take a chance on a 20lb corned beef. lol....
dearrie at 9:15PM on 01/26/09
Way! But only homemade. With poached eggs on top. Great way to use leftover tri-tip, too. In fact, I just had that last night. Mmmmm.
buffy at 9:36PM on 01/26/09
Way, but I think, depending on what brand you buy, that it comes out to over 800 calories per can, and an inordinate amount of fat.
BITTER at 4:44PM on 01/27/09
No way – not the canned stuff. Tastes like dogfood with added starch. But cowprintrabbit's description, and the addition of fried eggs, sounds good. Maybe I'll try that sometime.
