Coconut Candy Recipe Help

Valentines Day is coming up and my boyfriend is getting a big box of homemade treats. He's requested that I make a coconut chocolate candy similar to Almond Joy's. I have a few ideas in mind, but I've NEVER successfully made candy.

Does anyone have any recipes for a candy along the lines of an Almond Joy that can withstand overnight delivery across the country? Also, preferably, it'd be a pretty simple recipe/process seeing as how I completely suck at all things baking/candy-making related.

Hey, my aunt makes these every Christmas... This is an AB recipe, but it's exactly the same as hers. They're great, too!


Ingredients

* 1 cup toasted chopped Macadamia nuts
* 1 cup sweetened condensed milk
* 1 1/2 teaspoons almond extract
* 1 (7-ounce) bag sweetened shredded coconut
* 1 (12-ounce) bag semisweet chocolate morsels, melted

Directions

In a bowl mix together the nuts, condensed milk, almond extract, and coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest at room temperature for 4 hours or in the refrigerator for 1 hour.

After the balls have set up dip into the chocolate to coat evenly and lightly. Place onto a sheet pan to dry.

**Of course, you could omit the macadamia nuts and add almonds.

This is my favorite:

Coconut candy-
1 c. coconut
3/4 c. sugar
1 c. milk (higher milkfat is best) (coconut milk will also work)
1/4 tsp. cinnamon or other spice as desired
OR a little vanilla or coconut extract
2 tbsp butter

Heat a heavy pan for about a minute. Add 1 tbsp butter and melt. Add coconut and fry until dry but not browned. Add sugar and milk. Add any flavorings used. Boil until it becomes thick and starts sticking. Add last tbsp of butter and stir for 30 seconds. Mix should be soft. Pour into a greased pan or onto a greased baking sheet and allow to cool. Cut in squares and dip in chocolate or mold into balls/logs etc and dip in chocolate.
Add nuts to the top before dipping or while cooling if desired, or they can be mixed in during the addition of the last of the butter.
Sits at room temp fine for several days.

The hardest part is tempering the chocolate, but in the end you could just skip the tempering and hope for the best.

Last Christmas I made Ina Garten's macaroons and added chocolate chips and slivered almonds. They are cookies not candies, but they reminded me of an Almond Joy.
