I would grill both the turkey sausage and onions, along with some red bell peppers and a cubano pepper -- possibly some chunked zucchini and summer squash -- I'd have marinated the veggies in a bit of red wine vinegar and olive oil before grilling, so they have a bit of tang to them -- and salt and pepper.
Then I'd serve that alongside the cooked quinoa mixed with crushed rosemary and some feta cheese and fresh parsley with a squeeze of fresh lemon over the top.

Saute the turkey sausage, and onions with some garlic in olive oil. Add a bit of rosemary, thyme, salt and pepper. Add the quinoa and some pinenuts and toast very lightly and then add chicken stock and cook as you would rice. Then use this as a stuffing for tomatoes or peppers or squash.

I would make stuffed peppers. I would dice and sauted onion and scallion, remove sausage from casing and brown. I would mix it with cooked quinoa and a zesty tomato sauce and stuff into pepper.

The normal thought: a quinoa "risotto" laced with rosemary and chopped onion, served with cooked turkey sausage.

The "out there idea": A turkey sausage "hot dog" on a fresh baked rosemary bun topped with onion and a relish made from quinoa. Take that Top Chef! :)
