Who wants to wok and roll?

HA!!! Okay, so I have this weird obsession with asian flavor lately and I know that I have come across many peanut noodle dishes in my time but now, of course, can't find one I want to make. Anyone have any ideas for me?

Here's what I gots in the kitchen...

soba noodles
cilantro
soy
siracha
hoisin
sesame oil
sesame seeds
garlic
ginger
rice wine vinegar
hot chili oil
peanut butter
red bell pepper
green onion
chicken tenders

make me something yummy!!!!!

I would marinade the chicken w/some of the soy, siracha hoisin sesame oil, garlic, ginger hot chili oil and rice wine vinegar, overnight if possible. When ready make a stirfry sauce with all the sauces along with peanut butter, make soba as directed. Saute red pepper in some oil at a high temp for a few minutes remove to plate set aside, add a little more oil (if needed) to still hot wok and add the chicken pieces cook and stir a few minutes, add soba and red peppers and the sauce, mix all together, let it stay in wok a few minutes longer, plate it then dice cilantro and chop the green onions, sprinkle on top, and then the sesame seeds. If you can or have fresh basil leaves diced and wedges of lime good with dish too.

Totally not gourmet, quick & easy peanut noodles for 1:
1 T Peanut Butter
1 T warm water
mix vigorously until emulsified. Add sprinkling of hot chili flakes to taste. Mix. Add
1/2 T rice wine vinegar
1/2 T soy sauce
1/2 T sugar
Mix again.
Mix in 1 portion of cooked rice noodles. Thin with a little extra water/vinegar/soy, depending. Also, vary proportions of soy:vinegar:sugar to your taste.

(I know you said you've got soba, so that might work, but I think the soba taste is a bit strong for peanut noodles)

I would agree that soba is probably a bit strong in flavor for what you want. (Though in soup it can be fantastic!)

Soba should be okay if the sauce is mostly peanut butter and chili oil. And if you add the cilantro that should help too.

@LondonM - I was just going to post the same recipe. My only difference is that I prefer chili paste (homemade) and no sugar.

It's my favorite quick and easy peanut noodle recipe. I made it up when I was in college, so it must be a pretty standard peanut sauce recipe.
