What to do with leftover rice?

Yesterday I made a stir-fry, and cooked extra rice with the plan of making some fried rice with the excess. Of course, today fried rice is the last thing I want. So what should I do with about three cups of cooked jasmine rice?

Golabki (stuffed cabbage), stuffed peppers, rice pudding.

Or heat up a portion in the microwave, top with a fried egg, soy sauce and sriracha. Yum yum breakfast.

Rice pudding? Or were you specifically interested in entrees? If so, how about Warm Jasmine Rice Salad with Shrimp and Thai Herbs?

@Kerosena - That is my favorite leftover-rice meal too! My favorite is made with leftover short-grain brown rice.

Freeze it until you want to make fried rice.

Stuffed Peppers!!!!! LOLOL. There's irony in the timing.

I like to make arancini. Not healthy but fun and yummy.

I'd do rice pudding with some of it.

Make soup - would go well in a clear-broth soup, or pour a creamier soup over it for a hearty meal.

Side dish/starch - toss in some pine nuts or raisins or maybe a few spices, easy tasty addition to a meal.

Freeze it.

Any stew would be awesome on top! Myself, I'd go for a curry. Mm.

I like it as an enchilada-ish dish, rolled up with black beans and salsa, with cheese and sauce on top, baked until warm and gooey

oh yeah, casserole filler is a great option too

I love ladling homemade soup over a bowl of rice, too.

Rice, cheese, beans, roll in tortilla, microwave.

Make instant vanilla pudding, stir in rice.

Add to prepared chicken rice soup, as it never has enough rice in it anyway.

Chicken, broccoli, rice, cream soup, cheese. Bake.

I always eat my soup poured over rice :) whether it's vegetable soup, chicken noodle, gumbo, etc., plus chili, beef stew, goat curry, etc.

In high school back in the mid-80s (not sure if they still serve it anymore), the cafeteria used to pair rice with battered fried mahimahi filets. The rice (medium-grain) was mixed with some kind of vinegar, as there was a tinge of sweetness and sourness, so it may have been mirin, slivers of fresh carrots and green beans mixed in. While it's not hiding the leftover rice, it tastes quite different...

My family eats left over rice like hot cereal. Warm with butter, cinnamon, sugar, and milk. I have also had pretty good luck freezing rice.

mmm just warm it in the nuker with some butter and a little soy.

The old standby -- Fried rice. Always good and never the same twice.

You can use rice in a fritatta. I liked the stuffed cabbage rolls. I always make rice with chili.

Rice griddle cakes anyone? :)

Ingredients

3 eggs
l/2 tsp. salt
1 C. milk
2 tsp. baking powder
1/4 C. flour
2 Tbs. butter, melted
1 C. cooked rice

Directions

Beat eggs thoroughly. Add salt and milk. Mix baking powder with flour. Add to first mixture. Add butter and rice. Mix until smooth. Bake on hot griddle, browning on each side.

@Jeryzee seen the flick on weekends @ least 20 or more times lol.

Alton Brown's got a great recipe for oven-baked flounder, stuffed with a spinach filling and set on top of leftover cooked rice. It all gets baked with a cheesy cream sauce and is absolutely delicious. Check it out on FN website.

My leftover rice will turn into fried rice if I have enough of it.

If you don't feel like rice tonight, ziploc baggie it, and toss in the freezer until you need it for something like: to thicken pureed soups (split pea, roasted red pepper, mushroom, etc.), stuffed cabbage, stuffed peppers, fried rice, or your dog needs to go on a bland diet. I cant resist curry and rice, beef burgundy over rice (yes, even jasmine rice), fried kimchi rice topped with fried egg. 'kay, i'm gonna cook some rice now.

Everyone should eat Hawaiian Loco Moco at least once before their arteries explode. Now is as good a time as any...

Here is a recipe I've had at least 25 years. Chicken or veggies could be substituted for the tuna.
21/2c. cooked rice
4 eggs
2Tbls.butter, melted
2Tbls. chopped parsley(or other herb)
11/2c.shredded cheese(any kind)
1 can(7 oz.) tuna, drained and flaked
11/4c. milk
1/2 tsp salt
1/4 tsp dry mustard
1/4tsp pepper
Combine rice 1 slightly beaten egg, butter and parsley. Press mixture against bottom and sides of 9 inch pie plate. Sprinkle 3/4c. cheese over rice. Top with half tuna; sprinkle with remaining cheese. Beat togethr milk,3 eggs,salt mustard and pepper. Pour over pie mixture and sprinkle with remaining tuna. Bake 375 for 25 to 30 minutes

mix with smoked fish (the canned kippered herring works well), spring onions, seasonings of your choice, and an egg... make patties and fry up some ricy fishcakes!

Leftover rice is the traditional thickener for bisque.
