What to do with leftover arborio that's NOT risotto
So I made butternut squash risotto for part of my Christmas dinner, and it was fantastic. Problem was, apparently I had caught some vicious stomach bug that showed up a few hours later, and now I'm not sure I'll ever be able to eat butternut squash or risotto ever again. Sad, I know. But now I have about half a box of Arborio rice left over, and no idea what to do with it. Know of any recipes that call for Arborio that aren't risotto? Or does anyone have a risotto recipe that is so different (and good), it won't remind me of how I spent Christmas night?

You can totally boil risotto rice in a large amount of water, taste it for doneness, then drain like pasta. Arborio is the ONLY rice I know how to cook. I love making risotto. It's creamy on purpose.

A vote for rice pudding. Or arancini, the rice balls that have mozzarella in the middle. Or in a chicken soup.

I am sorry to hear of your tummy, I get that way myself whether food or drink, once I get sick it's all over. I like to put arborio in lecszo.

First, don't give up on risotto! Give it awhile before trying the dish again, but it's a sad life to live without some risotto now and then.
other ideas:
rice salad
rice pudding
lamb fajitas/burrito/taco...etc
use the arborio in your meatballs instead of bread crumbs
Or do what we always did as kids with any leftover rice. Put it in a bowl with some milk, a little sugar or honey, some butter and heat up. Instant, and delicious, breakfast.

anything you would use long grain for can be improved with short grained rice! I hate long grain rice with the rare exception actually, I think i'm still getting over years of min rice. (shuddering) I love to add short rice to soups as a wonderful thickener, makes everything creamy without the actual cream. Just be sure to not add the same amount you would normally add of long rice. I also love adding it to a big pot of red beans while cooking., makes them creamier and more delicious than ever.

Rice pudding is usually made with arborio rice. I was looking for ideas to use up my leftover rice from risotto too!

Another vote for paella! Arborio is also perfect for risengrynsgrot (Norwegian rice porridge), which is like a savory rice pudding.
