What to do with 20 zested Lemons?
I love Limoncello, the potent Italian lemon infused alcohol. And for Christmas I got a book with a recipe I decided to try.
But now I'm left with 20 lemons that I zested for the Limoncello. So here are my questions...
1. How long with the lemons last without their zest?
2. Any ideas on how to use these lemons soon other than the obvious lemonade?

Juice them and freeze the juice in ziplock bags. It's great if you can measure the amount of juice you're putting in each ziplock so you can take out just what you need.

Juice them, fill ice cube trays and freeze. Then you will have portioned amounts of lemon juice to use in your cooking. Average Ice cube tray "cup" holds about 1oz.

Lemon sorbet, lemon bars yum yum. The candied lemons. Lemon drop candies. But I would foremost make the Limoncello, because you store in the freezer and it can be used for endless of things.

and my first thought was also lemon curd. Actually my first was lemon meringue pie, but I don't like it much, so the pie guts would be curd. Yum.

Juice them and freeze them, as everyone suggested. Or, if storage space is an issue, and if you've got the means, slice them, dehydrate them, and whizz them up to a power. You'll be amazed at how little you end up with.

I agree to freeze the juice but freeze some of it in ice cube trays then bag the cubes. When you need some lemon juice for your tea or sauce you just grab a cube.
You can make simple syrup which will last a while.
The lemons minus their protective skin will last about 2 days then they will mummify.

Lemon curd can be frozen. I have mine stored in 1/2 pint freezer jars, leaving 1/2 inch headspace. It is handy for throwing together a tart quickly.

ok, after making limoncello you may be sick of making more alcoholic beverages, but i would make hard lemonade. raspberry or blueberry vodka works well.

When the world gives you lemons, make lemonade. PS: I've also made limoncello with Giada's recipe and used it to make her limoncello cheesecake. Delisiosa!
