What did you make for Christmas dinner?
Since it was just 2 of us, I wanted to make something special. I made Paula Deen's Crab and Shrimp Au Gratin, wild rice, roasted aspragus (sp?), salad and crusty bread. It was delicous.
I hope everyone out there had a wonderful holiday.

i had a friend over for brunch today. i made apricot pecan scones, hash browns, and scrambled eggs with goat cheese and smoked salmon. we had a big bowl of pomegranate seeds for dessert. now i'm sitting here snacking on some leftover potato latkes. hope my jeans still zip next week.

Honeybaked Ham, Martha's Mac and Cheese, deviled eggs, frozen pink fruit salad, green bean casserole, mince pie, chess pie, Bourbon Chocolate cake, fudge for Christmas Eve. Today we had enchiladas made with the chili i made this morning, tamales, chile con queso, guacamole and the leftover desserts from yesterday.

Appetizers were three different spreads with crackers, plus some mini-quiche-like things.
Dinner started with a salad with choice of 2 dressings, then came the beef tenderloin, lamb chops, mashed potatoes, beef mushroom gravy, carrots, zucchini with tomatoes, and buns.
Dessert was a rum cake, eggnog ice cream and assorted cookies.
This was for 4 people, so yeah, it was a lot of food. Sillier yet, DH didn't eat salad, and FIL eats his dressingless, so the choice of 2 salad dressings was for MIL and me.
Now the guests are gone, everything is cleaned up, and I'm sipping on Bailey's.

Wow Renee that sounds amazing, I wish I had been there to make it 3, At this time of year I get sick of the whole drawn out holiday dinner scene. I am looking forward to upscale dining with exciting and exotic flavors. Holidays in my house mean the same tried and true classics and while they're not bad Im just jonesing for something different.

Started the day with pumpkin waffles.
Dinner was Cioppino (tomato based seafood stew), linguine with clam sauce , no-knead bread and salad.
tiramisu and millefeuille (mini puff pastry cups filled with apricot jam and whipped cream)
oh, delicious. the stew recipe is a keeper.

Dinner was carnitas (husband smoked the pork shoulder all day yesterday, then braised it today), homemade tortillas (thanks to our friend and guest Feliciana), salsa, beans, rice and queso fundido. Dessert was pineapple and banana-filled crepes, sauteed with butter and brown sugar, flamed with rum and served over vanilla ice cream,

This year I walked up the street and bought sweet and sour soup with extra tofu, potstickers and boneless almond chicken. I also started out with a crab and artichoke dip w/pita chips for starters :).

Roasted vegetable/garlic soup, beef tenderloin w/marsala wine sauce, mashed potatoes done to absorb the maximum amount possible of butter and cream, roasted string beans, salad, cheese plate (epoisses (sp?), chimay, stilton), rocky road brownies w/ vanilla ice cream if wanted.
It went over really well. In my own personal experience, Christmas dinner is not the time to experiment. That said, there's a lot to be said for the classics. I mean, really, they wouldn't be classics unless there were a reason.
I plan to go nuts on New Year's Eve! I can't wait. It's my hands down favorite night to cook. Oodles of apps, it's a cook's dream.

We had a "butterfly" of Turkey-much easier and quicker to cook and ensure it is cooked to perfection. Roast Potatoes (I used Salad Potatoes-and they worked-no peeling too!). Carrots- roasted in good Olive Oil.
Small Sausages and the bacon that kept the Turkey moist-I also put in a sliced lemon with lemon juice over , a small sliced onion and a small wine glass of white wine. In the calculated time the Turkey was moist(but not overly so)and had a gentle taste(again it is too easy to get a too powerful taste.Gravy was home made and it took a while. The Brussels Sprouts were my daughters domain and she as usual got them perfect!
However I have to say there is far too much worry about cooking on Xmas day-It is simple even for the novice-why get worried-the trick is be liberal with the pre dinner drinks and then they are so sozzled they would not know whther it is good or badly cooked.

We prepared nothing, but we had Indian food, popcorn, and Chinese food.
We had an afternoon meal at our favorite Indian restaurant. I had goat curry and husband got butter chicken, nan, and vegetable pakora. We had a lot of leftovers so we dropped it off at home. Then ran out to a pretty packed theater and saw The Spirit, ate a tub of popcorn and drank a keg of soda. After the movie, we went out for Chinese food.

Breakfast of homemade cinnamon bread french toast and twice baked potato patties (leftover from Xmas Eve) and homemade rolls.
Late lunch of turkey breast, HoneyBaked Ham, mashed potatoes, mashed sweet potatoes, stuffing, cranberry sauce, real green been casserole (not the canned crap), and mustard pickle.
Dinner was pepsi and nachos at the Cleveland Cavaliers winning game.
For dessert cheesecake bars with leftover ham, mustard pickle, stuffing and homemade rolls. Yum!

we had a standing rib
roasted potatoes
assorted winter veg roasted
glazed carrots with corriander
mushy peas (have to have them at xmas)
and for dessert I made cheesecake bars (gluten free)
we also did mulled wine (AB's recipe)
and then espresso and gran marnier while opening presents
there was also assorted nuts (spicy and sweet) sitting around to fill up any odd corners.

We had a standing rib roast with an herb/garlic crust. I had the butcher cut the roast from the bone and then tie it back on. That made for super easy carving. I made a red wine reduction sauce to top it off.
Along side, we had twice baked potatoes and long-cooked green beans. The twice-baked potatoes are always a big hit. I scooped the potatoes out, leaving a nice shell. The potatoes were mashed and mixed with butter, sour cream, a little broth, some manchego cheese and crab meat. The shells were filled with the potato mixture and reheated in the oven while the meat rested before carving.
For dessert, my teenage daughter made individual chocolate souffle cakes.

I had the most beautiful seared rare filet mignon I've ever eaten with horseradish, corn on the cob, coleslaw, and beans at Cattleman's in Fabens Texas. If you sit in the Garden Room, like we did last night, you can watch a fat coyote eat some steak too.

I didn't use crab, but did use both muscles and clams...i also used fish stock instead of chicken stock.

Christmas Day was spent at BF's sister's house. We had a great time. Her husband made a long-cooked pork shoulder with stuffing and a variety of veggies. We had chestnuts (which didn't get made on Christmas Eve...LOL).
OMG, I don't think my mouth would know what to do with a salad right now...

Welllll, at my house, I made a turkey, mashed with gravy, green bean casserole (haters, step off...thats just how I roll), stuffing, salad and popovers. I didn't eat a bite of it.
At my second house, we had a bitchin' cajun fried turkey from....wait for it....wait for it... Popeyes! Meat tray, rolls, potato salad, macaroni salad, buffalo chicken dip, taco dip and cookies, cookies and cookies.
My third house was traditional Italian...braciole, lasagna, garlic bread, salad, greens, tiramisu.
Shave the dog, kick over the tree, christmas is in the bag people!

It was simple but delicious:
-"Brown Sugar and Spice-Crusted Ham" (Cooking Light) brown sugar,
coriander, cinnamon, cumin rub and later based with honey & orange
juice.
- Goat Cheese Mashed-Potato Gratin (Gourmet)
-Green Beans with Sesame Seeds (Silver Spoon)

Christmas was duck with farro risotto, swiss chard and carrots. The carrots were a mistake, but everything else went really well together. Dessert was eggnog ice cream sandwiches, but I didn't like the ice cream. Cookies were good, though.
Christmas Eve was a 10 pound ham (for two of us!) with scalloped potatoes, more carrots and green beans with a mustard dressing. Mince pies for dessert (I won't eat them).
And Chrstmas morning was my favorite - chocolate croissants (fresh from Trader Joe's!).

Dear god I better just turn in my foodie badge right now.
Breakfast was at father-in-laws, who despite working in food is NOT a food person. Since I skip the pork (bacon and sausage) I had one solid pancake (no butter in sight) w/syrup, one pillsbury grand cinnamon roll, and about 20 mini tater tots. This was sad. I'd rather have had my OLD sad traditional Christmas breakfast which was at LEAST the pillsbury ORANGE cinnamon rolls - man I love those.
Other than a few bites of Toblerone that I snuck while hiding from my 2.5 yr old, we ate nothing else until about 10pm when we decided to bust out a can of Nalley vegetarian chili (which I LOVE and my mom has to bring me from Washington) which we ended up putting over some jasmine rice that we stirred a can of diced green chilis into. At least I freshly grated the medium cheddar! Our only excuse this year is having a newborn and toddler and no room, time, or money. Next year will be a FEAST!

@Maresy, I think you can keep your foodie card. I think we've all had those times when you do the best you can and that's all there is to it, and food you like doesn't have to be gourmet to be good. It just has to be what you're enjoying at that moment. You get extra foodie points for specifying jasmine rice and medium chedder. A non-foodie would have said rice and cheese.

Wow! Everyone's food sounds delicious! I was really happy with the way ours turned out too. On Christmas Eve it was just myself and my boyfriend and I made pan-fried scallops wrapped in parma ham with a salad of chicory, cherry tomatoes and olives (starter); for the main, I made a spinach, courgette, sundried tomato and buffarella fritatta with red camargue rice, cashew nuts and sauteed asparagus.
Our Xmas lunch menu was:
Starter: home-made Argentinian empanadas: one filled with creamy sweetcorn, spices, onions and raisins and the other one with buffarella, sundried tomatoes and basil.
Main: Honey-roasted duck and pheasant with lots of herbs and spices in a thick red wine and plum sauce accompanied by roast potatoes and parnsips, sweet potato mash and steamed broccoli and leeks. Delicious!
For dessert: white chocolate and mascarpone cheesecake with roasted pecan nuts served with a warm dulce de leche sauce.
At night we had a selection of cheeses, pickles, relishes and crackers topped by home-made mince pies.
Needless to say, we were (and still are) stuffed but very happily fed...

We had a chowder of broccoli, baked potato & swiss cheese. Dessert was homemade fruitcake (made with home-candied citrus peels) that we have been dousing with cherry brandy and cream sherry since it was baked at Thanksgiving.
