I'm trying to hit the gym 4 days a week. But by the time I get home from work, have a quick snack, and get my workout in, it's nearly 10 pm and I barely have enough energy to put together a salad. I could probably live off salads if need be, but the problem is: my food blog is suffering, as well. I certainly can't just post salads on my blog every day. How boring.
So I've come to the conclusion that I might have to prepare my meals in advance on my non-workout days -- stuff that I can just pop in the oven when I get home or throw in the slow-cooker in the morning. Any ideas? I'm looking for simple, healthy (and of course, blog-worthy) dinners for 2 people.
