leftover phyllo - help
Just spent 3 labor intensive hours making those Greek spinach/feta triangles - tirapites and I have a bunch of fillo (phylo) sheets left - anyone have any inspirational uses for it -- just no more triangles please!

Baklava - pretty easy because you leave the sheets whole and cut it up after it's baked. Make them with a little orange blossom and rose water water, very festive.

You can make a pot pie of any kind, just lay across the top.
You also make all sorts of desserts of course. In the mood for anything in particular?

Depending on how much you have left, you could also sear off some beef fillets, make a quick basic duxelles sauce, coat the steaks in the duxelles and wrap with buttered phyllo and bake for a faux beef wellington. I've done it before and it's delicious and extremely decadent.

There's a recipe on the Cooking Light web site (I would link to it but it keeps crashing my computer!) that I love and make all the time. If you go to the CL site and search on Butternut-Cheese Pie you'll find it. It has shredded butternut squash, onions, feta, bulgar and mint -- it SO good! Really easy too -- all you have to do with the phyllo is layer it.

Wrap it around a hunk of brie (you don't need much phyllo, so a few sheets are perfect) and dried dates, a little honey, and bake. Invite some friends over for some spiced wine and you get points for thrift and hospitality to boot!

Cut the phyllo stack 3" wide then slice as thin as you can. Put in a bowl and toss to separate shreds. Dip sea scallops in flower then egg wash, then the phyllo. Pan fry in hot oil, the phyllo expands and you end up with Porcupine Scallops. Use a mixture of plain yogurt, fresh basil and mint for a dip. These are a Hit!!!!

Mousaka whether it be meat or veggie or both. Some sort of strudel or just freeze it like I do with lefovers.

Thanks all...and you know, I was so thinking desserts and appetizers that I totall forgot that you can use it as a topping for a pot pie.

i do lazy spanikopita - just roll it up like little cigars instead of triangles,
i'm too old for that.... though, they are my favorites, still, after all the years ... can never pass up spanikopita.

Pooch, I have made the cigar shapes also but I have found that when I freeze them they don't hold up as well as those darn triangles...big sigh.
It's one of those appetizers that I've made for too many years but can't give up.

I was watching Paula Deen the other day -- and she had this awesome recipe for Phyllo-Wrapped Asparagus (http://www.foodnetwork.com/recipes/paula-deen/phyllo-wrapped-asparagus-recipe/index.html). You should make that!!! It looks healthy, but also very tasty.
