I'm going to make bagels!
I've made bagels before and it's fun and easy. I want to make some as a gift for a friend who adores bagels, but the only recipes I can find are for plain bagels. Does anyone have any tips, advice, or secrets for different flavors?

If you give the bagels an egg wash just before baking you can add seeds to the outside of the bagel.
To make an onion bagel, you bake your bagels until there is about 2 minutes left in bake time, pull them out of the oven, brush with egg wash and sprinkle with dried onions, then finish baking- keep an eye on the onions so they don't burn. (Same with Parmesan cheese.)
You can simply knead in raisins and dried fruit at the end of your kneading time as well, if you want something sweet... I would think that you could really knead in anything at the end of your knead cycle- dried herbs, minced sun-dried tomatoes, spices, etc.
