Help me make dinner with sausage, zucchini, and mushrooms!
I don't want to make pasta. I do want to make it in under 60 minutes. Any ideas for what I can do? My fridge, freezer, and pantry are very well stocked.
The sausage is bulk Italian. The mushrooms are typical button. The zucchini is...well...zucchini. :)

buy a jar of pesto and some pasta, mix in with the rest of the cooked ingredients and you're good to go.

Stuffed zucchini, perhaps? Make a filling out of the sausage and mushrooms with a little breadcrumb topping, hollow out halved zucchini, roast?

Stuffed zucchini is up on my list of possibles! I think I have some frozen brown rice I could mix into it....

Skin the sausage, then parboil for 10 minutes. Put some rice on to cook. While that goes, wash & slice up the zukes and mushrooms as you please, toss into a skillet with olive oil and a little garlic and some salt. Slice up parboiled sausage, add to your veggies and brown. When that is all done, remove it from the skillet and make a quick pan sauce with whatever you have that sounds good. In my mind here, this looks a little creamy, but whatever. Put the stuff back in the sauce. Serve over rice.
or
Do up the veggies and sausage as above, add broth, wine/beer/whatever, and a can of tomatoes (fire roasted, diced, crushed, whatever). Soup!!

Last time I tried to make stuffed zuke, it came out a little weird. Maybe salting it helps? How does that work out for ya'll? (sounds good, btw).
Or you could do zuke/sausage stuffed mushrooms, though it would be a little tedious.

Oooh, yummy! Hollow out the zuccs, saute the innards with onion, the insides of the sausage and shrooms, garlic, in a bit of olive oil and dash of dry red wine ..I 'd mix that with some ricotta cheese and top with breadcrumbs and parm cheese...bake until bubbly...YUM

I do stuffed Zucchini a lot and salting does help, but I've never really had any trouble with them either way. I like adding some sort of soft cheese, like ricotta to the filling...adds some moistness.

mmmmm I have been neglecting my summer squashes for the winter ones. I should stop doing that.
@onalark - because we get sidetracked and distracted and forget the obvious? That's what SE is for! Also, I like to keep tortelloni and gnocchi in the freezer for adding a little heartiness to soups with little effort. If that's still too pasta-y for you, you could toss some barley or rice in to pump it up too.

You could do a bastardized version of Italian Wedding Soup with sausage meatballs.
Zucchini fries.
Mushrooms stuffed with the sausage, then broiled. I make them all the time and they are divine, I tell ya..... heavenly, even!

Pasta recipe, except serve sauce over polenta...either the fresh-cooked runny kind, or let cool, slice and grill, then sauce.
Grilled/broiled skewers? Skewer with bocconcini mozzarella for Italian flavor, marinated feta for Greek?

My thoughts:
Frittata- remove sausage from casing and brown. Set aside and brown a diced onion and diced zuccini in some of the sausage drippings. Scramble a few eggs with some heavy cream and add to pan along with sausage and diced tomatoed. Top with shredded cheese of your choice. Serve with mesculin salad and baguette.
or
Chili- sautee zuccuni, onion, carrot, pepper and dump diced tomatoes and all the beans you want ( black, kidney, cannelini, pinto. garbanzo...) into a big chili pot and simmer. Add browned sausage removed from casing. serve with shredded cheese and sour cream.

I would mix all that in scrambled eggs. or get hoagies and make a great sandwich out of it, suate the zuc's and mushrooms add onions and peppers if you have them , fry up the sausage and toast the buns I would add cheese and man you have one hell of a sandwich.
P,S you could even mix in a marinara sauce if you want.
