Good Tart Recipes?

Okay so my office is having a baking contest this month, prizes are 100 and 50 dollar gift certificates. Frankly I don't care about the prize. I just want to win!

I was leaning towards either cheesecake brownies or some kind of cupcake since my co-workers are absolutly gaga for cupcakes but on the other hand my co-workers gave me a tart pan as a wedding gift and I figure I should put it to use at some point. Any recomendations?

Amy Findley's Freaky Good Apple Tart. Recipe on the Food Network site. I've made it several times, and it's darned good. Interesting thing is that even though it's an apple pie, there's no cinnamon, so the flavor of the apples really stands out. I think I may have either added or increased the vanilla quantity when I made it, since I'm a bit of a vanilla addict.

And if you take the time to arrange the apples on top nicely, it can be a stunning presenation.

I personally love nut tarts, especially in the winter when fresh, seasonal fruit isn't always available. Two of my favorites are this caramel-nut tart from epicurious (warning: it's very sweet. I usually skip the chocolate and reduce the nutmeg in the crust) and this honey and pine nut tart from Gina DePalma (warning: it's very rich! I've cut down the butter in the filling by a couple tablespoons and used half and half in place of the cream with no adverse effects. I imagine it would be even more divine if you infused the honey with some fresh rosemary.) Good luck!

It was devoured in minutes! I think you're right that a tart is the way to go, because no matter what you put in it, it's bound to look impressive. Good luck!

I'm with Christine on this one! Its a show-stoppingly awesome presentation. It requires quite a bit of planning: poach pears, assemble dough, chill, roll, freeze, blind-bake, then fill and bake again, but you really can't mess it up. Also, everything can be made independently and ahead of time. You'll swear a lot trying to get the dough into the tart pan, but that's the only thing I had a problem with.

I saved the pear liquid and put it in a batch of ice cream.

Go, Emmab! I love DePalma's honey pine-nut tart - it's so amazing, and people think it's kind of exotic (although, honestly, it's really easy to make). I don't cut down on any of that fat, and I haven't find it to be too much. Especially, the first time out on a recipe, I'd go for exactly what's written - tinker the next time around.

Celebrate with Chocolate: Totally Over-the-Top Recipes by Marcel Desaulniers has a Chocolate Pecan tart in there that is really good. Now, if you are a masochist (and I have been) make the Chocolate Honey Mousse Bombe on the cover. A lot of work, but amazing.
