confused about shrimp.

hello everybody. i just had to buy 400 hundred lbs. of headless shrimp, sizes from 43-50 to10-15. ok....I was very green about it all. AND it seems everyone wants them deviened and the tails left on. do i devien shrimp til the end of time? All so, i have crab claw meat in 1 lb tubs. I need some idea's. Thanks
