Chocolate/Peppermint Bark for a Diabetic
I was planning to make peppermint bark this Christmas because the oven at my house isn't working (another topic unto itself) and to give it as gifts.
My dad's diabetic, and I know he'll eat the stuff regardless, so I'm trying to think of a way to lower the sugar content in the stuff without him really noticing. I know I don't actually add sugar to the recipe, but does anyone have any suggestions? Type of chocolate to use? Candy canes?

You should be able to purchase sugar-free white and dark chocolate (note: don't purchase unsweetened chocolate, which is different) that would melt down nicely to make bark. When I worked in a small chocolate shop, we sold sugar-free chocolate that was actually pretty good. We purchased a lot of stuff from Asher's, so that might be a good place to start. Also, you could crush up some sugar-free starlight mints or sugar-free candy canes. I think this might be the safest bet for a diabetic.
