Chiquita Banana Lied: Way or No Way?
She told us to keep them at room temp - always! I put mine in a plastic bag in the crisper drawer as soon as they turn yellow, and they last so much longer. I'm WAY - that sexy banana lied!!!
"I'm Chiquita the banana and I've come to say, / Bananas have to ripen in a ...certain way, / When they are flecked with brown and have a ... golden hue / Bananas are the best and are the best for you. / You can put them in the salad ... .... ... / You can put them in the pie-ie, / Anyway you want to eat them / It's impossible to beat them. / But bananas like the climate of the very, very tropical equator, / So you should never put bananas ... in the refrigerator. Oh no no no! (tum tum tum)"

She lied - Way.
You believe her - No Way

Oh, Perky, unwittingly you just hit on one of the BIGGEST arguments I have with my father about food!
My Dad: "I buy bananas and they always go bad so quickly!"
Me: Put them in the refrigerator because it stops them from ripening so quickly. Or leave out one for your cereal in the morning and keep the rest in the crisper.
My Dad: YOU CANNOT PUT THEM IN THE REFRIGERATOR! THEY WILL GO BLACK!
Me: They're already going black outside the 'fridge--give what I say a try.
My Dad: NONNONO!! TERRIBLE THINGS WILL HAPPEN IF YOU REFRIGERATE BANANAS!
Me: Give it a try!
My Dad: YOU THINK I DON'T KNOW HOW TO EAT BANANAS! Do you know how old I am!??!! I remember this commercial I saw years ago.. I forget...anyway...You're so disrespectful! What is that sound?
Me: Oops! Just slamming my head against a brick wall. Sorry about that!
In answer to your question, btw, I'm not a big banana person, but since it takes me forever to eat even one, I always refrigerate it. In the summer I like to freeze them, peeling them first and putting them in silver paper or tupperware, to have as a nice treat with almond milk in the morning, and maybe some nuts sprinkled on top.

i think if you put them in the fridge at the peak of ripeness, the skin will turn black but the banana inside is okay.... i've done this a few times....
pooch at 10:11AM on 12/24/08
I wonder: does this stop them from ripening if they're green? I like green bananas myself, instead of fully ripe ones, and if there were a way to slow down the ripening process... why, it would be like Christmas. ;)
jenilowrance at 10:32AM on 12/24/08
It slows the ripening process considerably @jenilowrance, from the moment you put them in the fridge. I prefer mine slightly underripe. Once they're soft, they get mashed and frozen.
This is what Dole says:
How to Store
Remove bananas from plastic produce bag and store at room temperature. The warmer it is, the faster the bananas will ripen. To slow ripening, refrigerate (peel will turn black but the fruit inside will be fresh and ripe). Bananas can be frozen once the banana is peeled and stored in a freezer bag until ready to use (use a bit of fresh lemon juice to reduce browning).
If bananas are too green, place them in a brown paper bag, in a warm dry area (but not in direct sunlight) for a day or two to encourage ripening. If there is still not enough yellow appearing on the peel, place a ripe apple in the bag with the bananas.
There, does that make it "like Christmas"? :-D You make me feel like Mrs. Claus.

i hate fruit flies, so i only buy as many as i'm going to eat-sometimes just one or two. avoid the whole issue.
gastronomeg at 11:06AM on 12/24/08
Also be sure not to keep them stored near your apples. Apples release some chemical that speed ripening, so you should try to keep them separate from your other fruit. Unless you want to speed the ripening of something, in which case, bury that bad boy in apples.

I have an easy solution- don't eat them at all! Personally, I find banana to be one of the few things in the world that are most foul and ruin everything they come near.
EtherMaiden at 12:03PM on 12/24/08
kewl thanks Perky, I've been eating alot of bannanas lately and have to buy them like 3 days at a time I'm going to put them in the fridge! thanks!!!!
huneybumper at 12:09PM on 12/24/08
way.
dearrie at 7:54PM on 12/24/08
@Heart - funny, I've had pretty much identical conversations with my FIL:-)
Way! Even though I don't eat bananas, only use them when I bake banana walnut bread (in which case, I keep them out as I want them to be almost black), I know that Chiquita the banana is wrong! Same thing applies to avocados, by the way - I keep them outside until they are as ripe as I want them to be, then - into the fridge they go!

Man, I am sure learning lots on SE - until I read this thread five minutes ago, I had never heard of schmaltz - I consider myself a fairly confident and knowledgeable cook, so I am amazed by the new information I have garnered from reading posts - keep it up!
When I first joined and started reading threads, I had to post a thread asking who Sandra Lee was. Look how far I have progressed in just a month!
bareneed at 8:57PM on 12/24/08
I keep them out of the refridge.
pjracz10 at 9:36PM on 12/24/08
Sorry, folks. I meant my comment to go to another thread. I got it mixed up.
bareneed at 10:43PM on 12/24/08
I don't ever fridge - maybe it's all that brainwashing from commercials but I don't usually chill bananas. Luckily, they never last very long around here.
You ask WAY or NO WAY... BUT, here's something you may not have considered...
Isn't it possible that since those first commercials, technology has come far enough so the cold of the fridge or the humidity or whatever it was that spoiled chilled naners has now been corrected?
chiff0nade at 4:44PM on 12/26/08
S'OK, bareneed - we all have an itchy trigger finger every now and then!
chiff0nade at 4:44PM on 12/26/08
*WAY* Gotta keep 'em fridged, or make banana bread constantly. (I hate the "truly ripe" ones!)
Robbo at 2:00AM on 12/27/08
once i put a banana in the refrigerator and after it turned black i never did it again. i guess i should really get over the black peel thing so i'm not in a mad rush to eat bananas every time i buy a bunch. also, has everyone noticed the price hike in bananas recently. i used to buy 6-7 for a dollar and now it's 2 for a dollar. even more reason to buy a bunch and refrigerate.
bionicgrrrl at 2:14AM on 12/31/08
@chiff ~ anything is possible, and humidity levels in refrigeration has vastly improved, I'd venture to guess? I am of the opinion that the songwriter inserted that little suggestion and people took it as gospel. They really had little experience with bananas before that, unless they came from a tropical climate.
I'm supposed to eat a banana every day for the potassium and I can't grocery shop anymore, so I really need for them to last as long as possible. Once they're perfectly ripe, I can't eat them. Too soft. It's a texture thing. I have a banana bread or three in my future, from the frozen mashed in my freezer. :-)
