Can Buttermilk be frozen?
I enjoy pancakes made with buttermilk, but I cannot always finish a quart of buttermilk before it goes bad. Can it be frozen? How long will it keep?

You've got nothing to lose if it's going to go bad, anyway. I'd suggest freezing it in measured portions for what you use it for, so you're not thawing and refreezing.
If anything, the texture might get a little weird, but that probably isn't going to make a difference if you're cooking with it.

They sell powdered (dehydrated) buttermilk. I keep it in my pantry for those buttermilk emergencies. Works great.
You can also make buttermilk in the privacy of your own kitchen.
Milk (just under one cup)
1 Tablespoon white vinegar or lemon juice
Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup. Add enough milk to bring the liquid up to the one-cup line.
Let stand for five minute.
It is just as tangy as the real deal.

@Jerzee, you crack me up. "buttermilk emergencies." It may be the excess of rummy eggnog this evening, but at the moment, that's a hilarious thought.

I'd worry less about freezing and more about finding other recipes where you can use it. Make biscuits, ranch dressing, maybe a snack cake calling for a small amount of yogurt - you can use buttermilk interchangeably.
@Jerz - I love that trick. I don't remember where I learned it - possibly from an old episode of The Frugal Gourmet but it has saved me so many times from either buying a quart of buttermilk I know I won't finish - or completely foregoing a recipe I'd really like to try due to the buttermilk requirement.
