Bison Burger.
Well, how are they?
I LOVE burgers, and the last one I had was a few months before I moved. At the Marché de Noel there is a guy selling them.
I mean, I'm gonna try it either way, I'd just like to get an idea of what I'm going to be tasting!

I like them better than beef burgers. If we go out for hamburgers, and bison is on the menu, then that is what I order.

I also LOVE bison burgers. The only kind I make at home. It's easy to overcook the bison burgers though, so it depends on a quality of the restaurant how good they are.

If you didn't know, you would think it was beef. If you're cooking them, keep in mind that they're really lean, so you either need to add some fat or make sure you don't dry 'em out when you cook them. Although I generally don't add anything when I'm cooking a beef burger, I'd probably consider add-ins with a bison burger, just to make sure it stays moist. Like cooking a turkey burger. Or an ostrich burger, for that matter.
My favorite bison use is for stew, where the leanness isn't such a problem, and the flavor shines through. I also like it for chili.
With steaks or burgers, the leanness can be a bit of a problem if you're not careful. Honestly, I'd rather use bison for braising applications.
If you're getting the burger from a restaurant, they should have a clue as to how to cook it properly.

I've had them at restaurants and preferred them to beef burgers.

I haven't had bison burgers but I've had bison fajitas, and also thought they were better than beef.

We've made bison burgers at home. Thuroughly enjoyed them. Hubby and I think bison burgers taste better than beef burgers in addition to being better for you. I wish I could describe the flavor better, but all I can come up with is that it tastes slightly beefier...That sounds so lame, I really wish I could come up with a better descriptor.

To my tastebuds, bison has a bit more of a distinctive iron flavor. You know, kind of like what you sense when you get a whiff of an iron-heavy vitamin. I love it way more than beef.

I use bison instead of burger meat always! It is nice and lean and makes an awesome pasta sauce. The burgers are great too.

Definitely order it medium rare so as not to dry it out. Itis delicious when not overcooked. I prefer it to beef I think the flavor comes through more because the fat doesn't mask it. Enjoy!

I love bison! It tastes very similar to beef, but its healthier for you. I have a Ted's Montana Grill, where the bison is their specialty, near me that I frequent often!

I second KtMc24... the MOST important thing is DO NOT AT ALL COSTS COOK IT BEYOND MEDIUM RARE. Enjoy..... great flavor... but then again most meat not shot up with hormones and fed a high grain and corn diet do taste pretty good.
