APPETIZERS PLEASE
I am kind of a newbie when it comes to appetizers. I can make all the usual taco dip, spinach dip, crab dip, etc. Since I absolutely ADORE appetizers I wanted to make this New Year's Eve a buffet of only appetizers, and lots of them! Can all of you wonderful cooks please share your delicious and different appetizer recipes with me? Thanks everyone and Happy New Year!

someone brought a guacamole with mango and pommegranate seeds to my house for xmas, i don't have the recipe -- but it was delicious. lots of cilantro and jalepeno also.... i'm sure you can throw it together. also i've made guacamole with crabmeat, also, another big hit.
i do a piece of fresh salmon, roasted, cooled and then made into a salad with a little bit of hellman's mayo, dill and freshly ground black pepper (salt & fresh lemon, too) ... a little bit of salmon goes a long way.....
served on cucumber rounds (or black bread)....

One I like to do for the holidays is beef tenderloin on toast. I've used toasted baguette, little toast cups (press bread rounds into mini-muffin tins and toast in the oven), or just toasted bread triangles. Cook the tenderloin to rare (or to your liking), chill, slice thinly. Squirt some horseradish cream on the toast, top with the tenderloin, garnish with caramelized onion, parsley and chopped, roasted red pepper.

Just kidding, I have friends that bring stuff like that to parties and they are always a big hit. God that chaps my arse! So Floridayaya sent me a recipe for a Jalapeno popper dip that was actually quite good. @pavlov-that's so funny you mentioned the cream cheese/peppers/cranberry sauce thing! i just had that for the 1st time over the holidays & it was actually quite tasty! (admittedly tho, i did sort of have to brace myself a little for the 1st bite.)

~a multitude of different little skewered bites-meats,veg,fish, whatever and a few dips to go along.
~a nice platter pf sliced salamis, hams, smoked fish and cheeses.
~big, overflowing bowls of super-nice mixed nuts, olives, pickles, and such.
~roasted fingerling potato halves w/ sour cream/scallion dip
~roasted mushrooms, artichoke hearts(canned and rinsed), and roasted pepper strips in a pesto-like marinade
~oysters on the half-shell
~you can never go wrong with shrimp cocktail- but change up the sauce or make other dips (like green goddess) and add crab-claws, or poached and chilled firm white-fleshed fish

Gougere - easy to make ahead of time and if you make little mini versions, easy to fill with lots of things.
Baby potatoes, creme fraiche and a bit of smoked salmon or caviar.
Filet mignon - cooked medium rare on thin slices of french bread with an aioli or horseradish type sauce. (already mentioned but oh so good and easy to do way ahead of time)
Smoked salmon, capers, cornichons.. with baby bagels - make your own platter kind of thing.
Just go with easy, do ahead and you'll actually enjoy the party too.

I like mini bruschettas with buffallo mozarella, sundried tomato, basil and olive oil or you can do goats cheese and avocado.
Skewers are a great idea as you can use different bits of marinated meat, veg and cheeses.
Seared asparagus wrapped in parma or serrano ham
Deviled eggs
Phyllo pastry bites or tartlets (you can play with any ingredients of your choice)
I made some empanadas for Xmas dinner that went down a treat (very easy to make too)
Rice croquettes
Mini fritatta squares

Shrimp cocktail is good, but jumbo shrimp wrapped in applewood smoked bacon is even better.
Mini Crab Cakes with a dab of remoulade.
Chicken, beef or pork satay with peanut sauce
Jalapenos stuffed with cream cheese and wrapped in bacon (I'm officially addicted).

gougeres sound good. I do a lot of baked brie around here. Serve it with different conserves and different baquette and or crackers. My people dig a baked brie.
We also do shrimp cocktail in the summer with old bay in the winter just plain old cold and salted.
Crab meat is on sale everywhere right now so crabcakes another great idea. Also lobster is on sale and small lobster cakes or mini slider lobster rolls are great ideas when it is this cheap.
I love to make beef teriyaki on a stick you take some thing flank steak marinate it for a few days in a good teriaki and thn slide onto skewers. This grills up so nice and is affordable and tasty.

Stuffed shrimp: Peel and devein large raw shrimp, butterfly and put a scant half tsp. of chive/onion cream cheese down slit. Wrap with a slice of prosciutto. Bake until shrimp is just cooked through and prosciutto is crisp. Devine!

I would ask the guests what they like. I am having a party on New Year's Eve and I sent out a mass e-mail asking what people wanted for apps. Take the majority votes and come up with your buffet-and you are sure to come up with winners. Here's what I have come up with for apps (of course I am making main course and dessert as well since I am the only one allowed to make food):
Chili Nachos (people LOVE my chili apparently)
Stuffed Jalapenos (with cream cheese and ranch mix-wrapped in bacon)
Hot Artichoke and Spinach Dip (Alton Brown's Recipe)
Guacamole
Salsa-will probably be there

I like to do a variety of different cheeses like brie with a cranberry cutney on top and various crackers and fruits like pears, figs, apples ect.
Breadsticks wrapped in proscuitto
Hot crab and artihcoke dip with pita chips
Hummus and pita chips
Deviled eggs
Bacon candy to go with the deviled egg
and of course theregular veggie and fruit platters.

I second @wookie's bacon wrapped jalapeno/cream cheese. I am addicted to the Pioneer Woman Cooks recipe which I make with any excuse possible.

@pav & gastronomeg~ In the southern states, if you have cream cheese with something poured over it, it's a party.
Try some little red potatoes stuffed with creme fraiche and caviar.
*Boil or roast your potatoes. (It's a matter of choice, roasted gives you a drier potato w/wrinkly skin and boiled is softer with a smooth skin)
*Cut them in half and scoop out the centers with a small melon baller
*Combine the cooked potato with creme fraiche and a little salt
*Mound the mixture back into the potatoes and top with (inexpensive) caviar. Black on some and red on the others. (An Asian market is a great source)
*Garnish the platter with long strips of chives and chopped chives
~if your potatoes are "roly", just take a little slice off of the bottom to give them a flat side.

Simple recipe that people rave about. A little work, but you can make it in advance.
Take dried apricots, and stuff each with a whole almond. The hardest part here is finding the little slit where the pit was removed, but once you get the hang of it, it's not so bad.
Wrap each apricot in a half-slice of bacon. Or use less bacon, depending on the size of the apricot. You want the bacon to overlap just a little -- you don't want to wrap it like a mummy.
Bake until the bacon is crispy. It's easier if you bake it on a rack so the fat drains, but do what's easy for you. You might want to turn the pieces once, so the bacon crisps all the way around.
Serve warm or room temp.
These can also be frozen after assembly and cooked later.
As much as I'm not over-fond of apricots, these are a perfect mix of sweet, salty and crunchy.

@dbcurrie....Good Lord in Heaven, those apricot thingies sound LOVERLY.
I've been addicted to the cream-cheese stuffed/bacon-wrapped jalepenos for a while now (make 'em a few times a month) but I'll have to try those apricots.
How about bacon wrapped scallops?
Cocktail meatballs in a crockpot of chili sauce and grape jelly is always a crowd pleaser. Yes...I said grape jelly. Don't laugh, it works.
