What's your favorite curry recipe?
I love curry dishes whether simple or complex-- you say curry and i say yum! I have a tendency to cook a lot of vegetarian dishes and am curious about some curries that contain some meat.

Ahh! Funny you should ask, i just received this recipe today from our Chef! A great Apple Curry Soup with Chavrie Goat Cheese!! I will post it up in a bit!

I'm a red-curry fan myself;
I don't care much for green or yellow curry.
But I just make sure I buy a tub of good-quality red curry, mix with coconut milk, fresh lime leaves, and fresh thai basil. Garlic and onions of course; then sautee with some diced chicken or shrimp! om nom nom

Funny you should ask, I just made curry satay to grill for dinner. I seems like we are having a bit of an Indian summer so it's still warm out. The marinade is coconut milk, curry powder, soy sauce, fish sauce, peanut butter, pepper & chopped garlic. Yummy!!

Last time I had curry (I think it was on lamb), I ended up in the hospital. The curry probably had nothing to do with it, but I haven't taken a chance since. It's off my list.

Curried cauliflower and potatoes is an old favorite that never fails to please.

yellow curry w/ dark meat chicken and diced potatoes... simmered w/ some chicken broth until it gets just a little thick from the potatoes... serve w/ some naan and oooh so good.

I make two version of curried potatoes... I add curry to the bechamel sauce for scalloped potatoes, and I also make this version with onions.

I gotta go with Japanese beef curry... lots of spiciness and onion and garlic and meat galore!

I absolutely love my husband's beef curry rice (Japanese).
I love massamun, red and green curries. While I can sorta admit to making it at home, I don't make it from scratch like my friend. I use the paste sold in those little tubs. :P
When we go to Indian restaurants, I make it a point to get goat curry. If they don't serve goat, then I'll settle for lamb.

Mmmmm...now I want some.
Faves here are cauliflower with chickpeas and tomato (yellow curry) and a spiced honey yellow or red curry with chicken and whatever veggies you like. Sweet, tangy and wonderful.
Now I am hungry....missed being on the site recently....glad to be back for the appetizing posts. Yum.

My mom's Curried Chicken and Potatoes. The chicken is hacked into small pieces on the bone, so it's moist and tender. I use both sambal and madras to make it, adding layers throughout. Great textural contrast, and yummy gravy to serve over rice. Of course, mine never comes out quite like mom's!

I love this yellow curry with onions, garlic, potatos, carrots, peppers, celery, cauliflower, basically anthing you want, you could add chicken but I don't, it is so good just with the potatos. The other I like is tikka masala or jaipuri.

There was a recipe on Serious Eats recently (August sometime?) for a Tomato and Chicken Curry that is my current favorite. Search the archives for it.

As promised here is a Apple Curry Soup Recipe:
Preparation Time: 45 Minutes
Makes 4 servings
Ingredients:
2 ea. Leeks (chopped and washed)
1 C Sliced white mushrooms
2 Oz. Vegetable oil
2 ea. Granny Smith apples (cut in wedges)
24 oz. Apple cider or juice
7 oz. Coconut milk
2 tsp. Curry powder
½ tsp. Turmeric
2 pkg. Chavrie® fresh Goat Cheese (reserve 1 pkg. for garnishing)
Directions:
• Sweat leeks and mushrooms in vegetable oil until tender (without color) in a heavy gauge sauce pot
• Add apples, apple cider, coconut milk, curry powder, turmeric. Bring to a boil simmer for 20 minutes until potato is fully cooked
• Add the goat cheese and season with salt and pepper.
• Pour entire contents in a blender and puree or puree with a hand held mixer
• Strain through a fine chinois. And keep warm
• Serve hot
• Garnish with slices of apple or a dollop of cheese

OMG! i am so happy with all of the recipes from this post-- As i said earlier, we are huge fans of curries and i certainly have had some great new inspirations-- thanks for the new directions... the apple curry soup is awesome. i added a habanero in the veg mix...
