What to do with an excess of spicy tomato soup
I made spicy tomato soup the other day (ingredients were onions, garlic, jalapeno, tomatoes, water and cumin) the end result just didn't please. I like spicy things but this soup was just too accidic. I put some yougurt in there to calm it down but I still don't like it much. My husband likes it but its' way too much leftovers for one person.
Any suggestions for ways I could use it up? I was thinking about using it as a marinade or putting it in the crockpot with chicken to make enchilada filling. Any other ideas?

Use it as a base to made from scratch tomato sauce
simmer meat in it for tacos or other Mexican dishes

Tortilla soup. Or some version of Mexicali soup. Simmer some corn on the cob (or just the cobs) to make a sweet corn scented broth. Add the corn kernels to the soup, cooked shredded chicken, your spicy soup, simmered together to meld the flavors. Serve with diced avocados, crisp tortilla strips, dollop sour cream, sprinkle of cilantro.
Or add it to your next batch of chilli. The chicken enchiladas sound good, too.

If would be a nice base for a spicy stew. Next time, a little sugar or honey will tame the acidity, and ingedients like carrots, which are sweet, will also balance the acid.
But right now, I'm thinking that a spicy beef stew would be nice. Or pork. Or chicken. or....whatever's in the freezer.

I agree with dbcurrie--add a little honey to help balance it out and turn it into a spicy stew or soup. How's about with shrimp and serve it over rice?

you could use it instead of water to make rice with, stir in some shrimp/andouille/chicken, and you're good to go.

you could use it for a base for minestroni soup - add mixed vegs, chicken stock, white beans (& yes that tsp of sugar!) 1/2 cup of pasta & forget olive you favorite italian restaraunt!
or you could add raw chicken & simmer for 1/2 hour ading some stewed tomatoes and have chicken caccitore - serve over rice or pasta - yum!

I would either do Bloody's or marinate beef with is or make chile Colorado with pork, thicken it and use for sauce for whatever kind of enchiladas, chile rellenos. Make quesadillas and have a spicy soup and cheese sandwich, drool drool.
