Well, French fries are the classic side, in my experience. Not real feasible in most private homes; think about roasted potatoes instead. But WERE you talking about wine? If so, I agree with the malbec.

and if you are looking for sides... I agree with the roasted potatoes.
An Argentine family we know often serves a spinach pie that has whole hard cooked eggs in it which goes amazingly well with the strong beefyness.

My first thought was roasted fingerling potatoes. Although, yes, french fries are normally served with steak, it is not usually a steak with chimichurri.
@katarina_santiago: "Argentine"... thank you for not saying "Argentinian" - having lived there for 6+ years, it just gets on my nerves, even if it might be the right way. I can't explain why.

Personally, I'd go with fingerlings, boiled and then finished in a skillet with oil and garlic. . .and then a roasted corn, red pepper, black bean salsa, served cold.

I have been making a very simple russet and sweet potato roast that would go nicely with that.
It's a 2:1 ratio of russet to sweet.
olive oil
salt and pepper
I have a "vidalia chopper" (http://www.amazon.com/vidalia-chopper/dp/B000MVGYOI) (don't ask, it was a gift and my 5 year old daughter loves it) which allows you to uniformly chop "fries" from the potatoes about 1" in length which works nicely for this.
It's a nice compliment to a well flavored dish like the chimichurri beef.

I would make some greens and potatoes.
Garlicky chard would be great.
I had a great steak on creamed spinach the other day. YUM
Lemons is right that skinny real french fries would be best.
