Veggie Food Blogs?

I'm a foodie who is trying her best to stick vegetarian for health reasons. I'm hard time finding great vegetarian recipes. Can anyone recommend some great vegetarian food blogs?

she's a vegetarian and her family isn't. most of the recipes are for one, but can be easily adapted.

Also, for filling vegetarian meals, I like the cookbook Veganomicon (so far, I haven't had it very long). The recipes are vegan, but very hearty, and my (very unvegetarian) family has liked everything I've made from it. If you're going vegetarian for health reasons, you don't want to cover everything in cheese for flavor, so looking at a vegan book might be useful.

Also, my omni brother (16, not a foodie, but does self-define as meatatarian) approves of the "hedgehog" from my blog, tempeh bacon and spanokopita.

An old cookbook that you might be able to find in used bookstores or websellers is The Enchanted Broccoli Forest. I eat meat, but I've always liked that book.

When you say you're "trying" to stick with vegetarian meals, it sounds like you're still eating meat. So, since this isn't a decision based on moral grounds where there is no gray area, maybe you'd be more successful if you treated meat as a condiment instead of as the main dish.

What I mean is that instead of having a meal where there's a chicken breast or pork chop or steak with veggies on the side, make meals where the veggies are the bulk of the meal, and the meat adds some flavor. You could do a stir-fry, for example, that's loaded with veggies, and there's a small portion of meat. Fajitas/tacos could be done the same way. And then you serve it with rice and/or beans and and maybe a salad.

If you're eating with someone else, you can serve yourself a higher percentage of the veggies, too.

Stews, soups, and casseroles can be done the same way. Even sandwiches.

A lot of pasta sauces can be done without meat, but for those that include meat, it's not a lot per serving, and you could cut back even more.

I cook like this a lot, where meat isn't the star of the meal, and if you think about it there are plenty of regular things that you probably make where you could cut back on the meat portion and add more veggies.

After a while, you might be more comfortable eliminating the meat entirely, if that's your goal.

Vegan Yum-Yum, Bittersweet, and EatMeDelicious are all favorites, and I definitely second 101 cookbooks!

@ Madelyn - I was going to add you, I enjoy your site because of the vegetarian aspect, but also the Caribbean flava :-)

I haven't posted very much lately (my reason/excuse: moving, starting a new, way more demanding job, and planning a wedding), but I think there's some good stuff on here nonetheless: raspberry eggplant. But like jennywenny, there are lots of baked goods on there, too!

Cheap Healthy Good isn't always vegetarian, but there is a majority of vegetarian recipes on that website, and I really enjoy reading it! The section tagged as "Recipes: Vegetarian" has 117 entries, including this recipe which looks fantastic!

there is a whole world of really great vegetarian and vegan food blogs! i would start at the post punk kitchen, http://theppk.net -- the creaters of that blog are huge in the veg food world. their books, veganomicon and vegan cupcakes take over the world are really wonderful.
