turkey with cheesecloth
I saw a show where a cheescloth was soaked in butter and then put on top of the turkey, also he said you should never open your over because that lets the heat out-the cheescloth will baste the turkey. Did anyone see that show ? Who was the cook ?

I didn't see the show but my mother always draped her birds with an oil dishcloth before roasting. She'd baste right onto the cloth and said it helped keep the bird moist. The cloth came off for about the last 30 minutes to allow the skin to brown and crisp. I'm not sure if she tried to restore the cloth to use afterward but she cranked out a beautiful bird that no one complained about but by today's standard may be called a bit dry. Methinks she over cooked rather than used a bad technique. Instant-reads showed up decades after her death...

Alex Guarnaschelli (sp?) did it last week on her FN show. I thought it looked like a great idea. Like Czken above, she took the cloth off for the last 30 minutes. The bird looked fantastic!

THis is a good practice when smoking a turkey too....keeps the bird from getting that burnt look

I always soak cheesecloth in melted butter and tuck in the bird. I still baste it, but remove the cheesecloth for the last half hour - it always comes out beautifully browned and moist.

Using cheesecloth soaked in a mixture of butter and wine will turn out a beautiful bird, probably with a slightly moister breast- just make sure the cheesecloth never dries out, or it can catch fire!! Also, I will second Alex's comment about opening the oven- of course you have to open it periodically to baste- if you can, take the turkey out and out it back in, or you will lose all your oven heat. I think this is the main reason it takes people 8 hours to roast a turkey!

@suthungirl ~ I went over to the FN site and Alex says in her recipe to remove the cheesecloth after 2 hours. I did not see the program so now I am a little confused.

Ha Ha! It was windy and "chilly". High 60's and low 70's. Dad had to put on his long pants and flannel shirt. I remained content in a t-shirt and shorts.

So that's where you were hiding! Is that the vacation you talked about missing? I was worried it had something to do with your family or puppy dog. You missed the snow, then? The trees and lawns were covered and looked so pretty, but damn girl, it's been cold - especially when you lose power for 3 days. The price of living in the country.

@Perk ~ Bill and I were supposed to go for a week. A few days with Dad and the rest of the week in Ft Lauderdale. He stayed home with Eddie and I did the Dad visit. Eddie is hanging in. Thanks for thinking of us! I was through Perk-town this morning!!

I am a stuffing in the bird fanatic. I shove cheese cloth into the neck and body cavities and stuff my sage, sausage, and onion stuffing into it. When turkey is done....I simply pull out the cheese cloth bags and there is all my stuffing. No stuffing search and seizure!! I hope someone else does this??

don't use cheesecloth, use bacon , take the cloth off after 2 hours. keep it wet while it is on.

Thanks dearrie. I will pass all this info along to the turkey cooker. I already told her about the cheesecloth. I don't eat turkey. I am roasting a prime rib out on the grill. Yum!

My sil makes the turkey every year using the Martha method and it is absolutely perfect every time. One year she forgot to buy cheesecloth and the turkey was so dry.
