Thanksgiving's over. What's on the table for Christmas?
Just loved reading about everyone's thanksgiving menus so what's on the menu for Christmas or Channukah? It's always so fascinating to read about others' traditions.
At my house we have several.
Prime Rib, scalloped potatoes, creamed spinach and yorkshire pudding is one of them.
The other must have is Zuppa di Pesce - although I'm sure I've spelled it wrong.
Our tree trimming is always lots of hors d'oeuvres such as spanakopita, pigs in a blanket (yea, I know), home made gravlax, home made country pate with home made cranberry chutney, mom's onion dip (the only reason to buy Miracle whip) and the list goes on and on.
Would love to hear about your traditional foods.

I am taking a week off and then the baking will begin. We are wanting 7 fishes for christmas eve and probably a ham for christmas day.
I am thinking of which cake to bake this week. I have been so busy I may have to take tomorrow to rethink my plan.
I have always wanted to do a prime rib. Nice horseradish sauce and yorkshire puddings that sounds so good.

Christmas Eve we go to my sister-in-law's for beef tenderloin, twice baked potatoes, salad, green bean casserole, wine......a grown up affair since there are no small children on that side of the family.
Christmas day, since there will just be the two of us, I am thinking of crab cakes MAYBE....I have never made them so any suggestions?????

Totally breaking tradition this year and flying to NYC to visit my son - it was my turn to host Christmas dinner so I am extra excited to be going away lol!
My birthday is the 21st, so will have my mom & dad over for stuffed cabbage and mashed potatoes and then off to watch the live nativity program at the local church.
Not sure where we'll end up on Christmas day for dinner - I know it won't be at my son's - he can't afford to have the gas turned on so no stove!

So far, I'm thinking beef tenderloin and little lamb chops. I've got a bunch of chops from the lamb I bought last year, but DH isn't as crazy about them as I am, so I'll use some for Christmas, and the beef will be there for whoever doesn't like lamb.
Mashed potatoes and gravy are a given. I'm ahead of the game on that, since I've got a stock already made and frozen, so that's the base of the gravy.
Probably carrots, because it's the other veg that FIL will eat; we had the green beans for Thanksgiving..
I'm thinking I might do something with plaintains, just to be different.
Dessert will include a tray of cookies, homemade ice cream, and probably some kind of cake or pie, to be determined.
That's Christmas day, Christmas eve will be just the two of us, and it could be anything. I'll figure that out when the day gets closer.

So far...
Spiral cut ham with roasted potatoes. (peeled potatoes, chunked up and tossed with olive oil and Good Seasonings Dressing mix, and grated parm. Bake at 400 degrees until browned. They are the bomb!!)
Turkey breast with sage, sausage and onion stuffing.
Braised brussels sprouts with shallots, bacon and parmesan.
At least that is all I know about so far...the story will continue..

It was really interesting growing up with a white mom with southern roots and a Mexican dad- as in, born and raised in Mexico and didn't come here until his late teens. Our house was always this weird mishmash of what my brothers and I called "white people food" like tuna casseroles and big, BBQ's and Mexican food, some traditional, some of my dad's own making. I'm older now, but some of this still plays out in our holiday food. For Thanksgiving, I did the traditional turkey and sides that my mom wanted, but for Christmas- as it's always been- my dad will get his beloved Mexican food.
We'll make homemade tamales, probably chicken chili Verde and my dad's awesome turkey enchiladas slathered in homemade mole and cheese.

An awful lot of different types of cheese's and finger foods. Then I b que all different types of steaks, chicken, veggies on the barbie, and this year we are going to order a turdunken.

I had such a great time cooking for three days for Thanksgiving, and I'm already looking forward to Christmas dinner. Here's what I've figured out so far:
Start with salad, probably Caesar.
Standing rib roast with horseradish compound butter.
Potato gratin.
Roasted carrots, parsnips, beets.
Maybe green beans.
Haven't figured out dessert yet.

SO's birthday is a week before xmas so I'll fix a rib roast for his bday and lasagna for xmas. That way he gets his 2 faves. At least thats the plan so far, definately subject to change, usually at a moments notice lol

@PumpkinBear - turkey enchiladas with homemade mole? Can your dad adopt me?
As for me, we will be back out in the desert either doing a potluck in someone's RV (you would be surprised how good camper cooking is) or the big party at the campground with not over-the-top-delicious food, but tons of food nonetheless plus the energy of 50-100 people to make up for that busy family-packed house feel of the holidays.

The wife and I were just discussing Christmas last night. We are undecided if we are going to host or not.
If we do I think that I will use the following as a base for the menu, and then embellish as the date gets closer.
Roast Turkey, undecided if I will do a traditional brine or a dry brine.
Herbed mashed potatoes
Brussels's sprouts .
Stuffing/Dressing (had an interesting stuffing this past thanksgiving, that had cream cheese in it, might have to play around with this concept)
Gravy
Optional items:
smoked ham from local butcher (amazing ham!)
roast duck (last year did a roast duck with a port sauce)
Standing Rib Roast (house favorite when entertaining)
Second vegetable and starch to be named later.

Christmas Eve we do the traditional Cuban thing and roast an entire pig in our backyard (we have a special oven for this). I make my grandmother's famous black beans and white rice. My mom makes yuca w/garlic and onions. It's delicious!
Christmas morning we're flying up to Michigan to spend some time with my Hub's family. They have prime rib, twiced baked potatoes, green beans and a huge salad. I'll probably make an apple pie and there'll be loads of delicious candy cane cookies!
bitchincamero at 12:08PM on 12/01/08
@bitchincamero--I'm a sucker for whole roast pigs! Man! If I didn't miss my family so much, I'd try to wrangle an invite to your house! Very cool.
We (Mom, my sisters, cousins, aunts, and myself) will probably start talking this week about what the menu will be for Christmas.
wookie at 11:22PM on 12/01/08
@pumpkinbear--see if you can get Dad's turkey enchilada with mole recipe...I've got a ton of turkey in the freezer!
