I was just informed that the dinner I will be attending will be having a dessert contest.

This pumpkin pie Cookie recipe won a contest on our site:
Pumpkin Pie Cookies
Ingredients
1 1/2 C. healthy butter such as Smart Balance
1 C. Splenda
3 eggs
1 15 oz. can pumpkin
1 Tbs. ground cinnamon
1/2 tsp. ground nutmeg
1 1/2 tsp. vanilla extract
3 C. all-purpose flour
1 1/2 tsp. baking powder
Craisins and toasted pecan pieces
Directions
Grease cookie sheets and preheat oven to 350 degrees. Mix butter and Splenda with mixer until well mixed. Add eggs, pumpkin, spices, vanilla. Sift dry ingredients together gradually add to pumpkin mixture, mixing by hand. Mix in Craisins and pecans. Drop onto cookie sheets bake 10-15 minutes or until slightly browned.

how about a sweet potato flan... that you can make with pumpkin too if you rather or a coconut tembleque, a puertorican holiday dessert. An Indian carrot burfi would definitely be different and very easy to make and serve.
I will be trying myself a pumpkin tres leches cake... wish me luck.

three layer pumpkin cheesecake with a praline crust sound good? K-Paul's sweet potato-pecan pie is awesome and i never have any leftovers when i bring that to a dinner. The pumpkin cheesecake is a pumpkin pie layer on top, a pumpkin and creamcheese middle layer and a basic cheesecake batter for the initial layer-- crust is dark brown sugar, ground pecans, melted butter, gingersnap cookies crushed.
