Soft Pumpkin Cookies

Somebody here was looking for a soft pumpkin cookie recipe a week or so ago. I was looking at cookie recipes on verybestbaking.com and saw this http://www.verybestbaking.com/recipes/detail.aspx?ID=32364

This one is good too:

Ingredients

1/2 C. (1 stick) butter, softened
1-1/4 C. brown sugar
2 eggs, beaten
1-1/2 C. pumpkin, canned or cooked
1-1/2 C. flour
1 Tbs. baking powder
1/4 tsp. ginger
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 C. walnuts, chopped

Directions

Preheat oven to 400 degrees F. Cream butter and sugar, then mix in eggs and pumpkin. Mix dry ingredients in sifter, and then sift into pumpkin mixture. Stir, and add nuts. Drop by spoonfuls onto a baking sheet. Bake for 15 minutes, or until lightly browned.

Yield: Makes about 5 dozen cookies.

this is the BEST one - it is from a cookbook called "the search for the perfect chocolate chip cookie." it is so good, in fact, that i am making it to bring to my boyfriend's parent's house for thanksgiving:

spicy chocolate chip pumpkin cookies

2 cups flour
4 teaspoons baking powder
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1 teaspoon salt
1/2 cup shortening
1 cup sugar
2 large eggs, beaten
1 cup pumpkin puree
6 ounces semisweet chocolate chips

- preheat oven to 350*
- sift together flour, baking powder, cinnamon, nutmeg, ginger, and salt, and set aside
- cream shortening, and gradually add sugar. add beaten eggs and pumpkin, and mix well.
- blend in sifted ingredients until well mixed
- add chocolate chips
- drop by teaspoonfulls onto greased baking sheets. bake at 350* on top rack of oven for 15 minutes

makes 5-6 dozen

i made the cookies smaller, so i used mini chips

@NYCEater I just made your cookies and they were devoured by SO and friends. LOL I've been asked to make more. I think I've created a monser :S
