no-bake dessert ideas?
The oven went out, and the new part is on backorder. We did manage to have a fairly traditional Thanksgiving dinner with no oven. But now I'm not sure what to do about the small dinner party we have planned for Saturday night.
The menu is set, and we can manage everything, but cannot come up with a dessert idea that does not require an oven.
Any ideas?

Oh no! That sucks. I really love Cornflake and PB balls once and a while, they're really good!
here's the recipe, it needs a stovetop only.
goodluck! :D

It's out of season, but fruit with real hand-whipped whipped cream would be nice.
I've seen (somewhere) recipes for no-bake cheesecakes, but couldn't tell you if they're good or not.
Or you could do some sort of thing with custard. You could do a custard pie or do some sort of layered dessert with the abovementioned fruit and whipped cream.
Fudge?
Dessert crepes?
Ice cream?

Pumpkin or butterscotch pudding with fresh whipped cream.

Sundae bar w/ variety of toppings
chocolate mousse
crepes w/ bananas foster stuffing
chocolate fondue
red wine poached pears
or take a break and buy something from a great bakery, after all, you cooked the whole meal w/o an oven.

Panna cotta. There are lots of interesting recipes out there.
SqueezeBottle at 3:32PM on 11/28/08
If you're up for it, I agree with MTMc24 about the crepes.
If you don't feel like making crepes, you can still saute some fruit with butter, brown sugar, and choice of spices or liqueur, then serve over good vanilla ice cream.

Chocolate mousse! If you buy pasturized eggs (or don't worry about raw eggs) you can whip it up without any heat at all. Well, you need a microwave to melt the chocolate.

Oprah had a no bake pumpkin chiffon pie on her show recently--maybe give that a shot if you're not pumpkinned out. Or how's about a make your own hot fudge sundae bar--it's always fun to see who will create the ultimate pig fest or ultimate taste fest.

Ice cream.
There's lots of ways to make it without an ice cream maker.

i second the panna cotta, it's so easy and people really love it.... i always make this when i don't feel like baking.....
or, get some good quality brownies (i mean bakery quality) and serve with some different ice creams .... cherry vanilla, coffee, butter pecan ....
and maybe some nice grapes or sliced oranges....

cook some sweet potatoes, drain well and peel, put them througha food mill of just mash well with a little brown sugar and some spices(whatever you like) loosen the mix up with some eggnog, then bloom some geletin in more eggnog, (I used 3 envelopes for 2 pies) when the geletin is bloomed, add to the sweet potato mix and pour into a graham cracker crust. stick it in the fridge for at least 2-3 hrs and voila no bake pie thats pretty tasty.

trifle - if you buy the pound cake - I find that any good bakery's pound cake is as good as anything I can make at home. Then it's custard (stove top), fruit, whipped cream, some sherry to soak the cake. I love trifle!

thanks, guys for some terrific suggestions. We had already nixed the ice cream idea (our guests will be traveling about 45 minutes, and the weather is cold and wet).
We considered something with custard, and I really was lobbying for chocolate mousse. I think that chocolate is going to win.
As we are about 45 minutes from the closest grocery store (mountain cabin in North Carolina), we are making do with what's in the fridge.
Thanks again.

maybe some cinnamon fried apples with either whipped cream or ice cream... kinda like apple pie without the crust!
Delinia at 1:32PM on 11/29/08
it's never to cold for ice cream
dearrie at 1:47PM on 11/29/08
@maureen, YUM I'm making trifle.

Ice cream is my go to dessert idea when I am entertaining... i sometimes top it with fruit compotes, like this cranberry preserves. Super good and in season.
I also make brown rice krispies treats with almond butter and no marshmallows. These are vegetarian and vegan... and with more flavor than the original version.
If you're into fruity desserts... I loooooooooove this Strawberry Kanten dessert. It's like a pudding, but super refreshing and soozing. I love it, even if it takes a little while to make.
And if this is not your thing... how about serving some cut fruit (like pears and apples) and serve them with brie or a blue cheese, a drizzle of honey and toasted walnuts (that you can toast on a dry skillet for about 10 minutes).
Good luck for your party...

Do you still have a working range? If so, this recipe is AMAZING, though I am a bit biased . . . it's for mint & chocolate "cupcakes" -- and actually, if you aren't vegan (the recipe is) -- you can just substitute "regular" pudding and use instant . . .
Basically, it's an oreo crust with mint-chocolate pudding inside . . . shaped like a little cupcake.
Here's the recipe: http://makemethod.vox.com/library/post/mint-chocolate-cupcakes.html

Tiramisu! Cooks Illustrated has an amazing recipe that uses cooked instead of raw eggs. And it tastes just like restaurant-made
Cookieeater at 2:44PM on 11/30/08
How about a Chocolate Fountain? You can cut up fruits and treats and you won't need an oven or stove...
Also, you can try grilling some fruit and making a drizzle/frosting to go on top.
Let us know what you decide upon. :)

Root beer floats (made w/vanilla ice cream) are always a good (and fun in a retro kinda way) choice. In fact, we are having them tonight!
gourmetgal at 7:32PM on 12/01/08
Ohh. I like cookieeater's tiramisu idea. It's really not that hard to make. No baking. Generally well liked. I have a recipe that doesn't involve eggs at all.
Yeah, I'd say it's never too cold for ice cream. I'm not trying to be pushy, but unless you serve dessert right as they arrive out of the cold, I'd think they'd be warmed up enough by the time it comes to dessert time. At least that's what I think about it.
wunami at 1:51AM on 12/02/08
I like to make odd ice cream sandwiches--pick up a box of gourmet cookies, cinnamon maybe, and add white chocolate hazelnut. or ???, ice cream.
Variations on Brandy Alexanders are also quite welcome.
beano at 9:00AM on 12/02/08
I would go with ice cream, either homemade or best-quality store-bought, a beautiful mousse, or dessert fondue.
Good luck!

If it were me, I'd mix up some brownie batter and put it in the waffle iron, then drizzle it with some fruit, caramel, or heated peanut butter. I think blondies might be good, too. It could be an epic fail, but I bet it'll be talked about for quite some time.
