Leftover tacos reincarnate as...?

Last night was a taco party. Now we have leftover taco fixings of assorted kinds, and I'd like to use them up as best we can before they go bad.

This morning was burritos and quesadillas for breakfast, but I'd like to find something a bit more interesting to do with all these leftovers.

What do you do with leftover taco goodies? I really don't want three days of loaded nachos.

I've got chips, tortillas (flour and corn), salsa, cheeses, sour cream, guacamole, lettuce, cilantro, beans, rice, onion, lime, etc. Also pollo con verde, vegetarian taco "meat", and beef taco filling.

If it's a common taco filling or topping, I've got it.

If you had ground beef tacos, then I would try to make Mexican Lasagna. You can use most of everything you have (except for your lettuce if you used them). You will also need to make some Mexican rice. Put a layer of your ground beef on the bottom of the casserole dish. Then put a layer of mexican rice, then layer of sour cream and then top with mexican or cheddar cheese. Repeat this process one more time. If you have salsa, add a layer of salsa over mexican rice before you put the sour cream. If you like it spicy I would squirt some hot sauce on top and bake it until cheese is melted and everything is heated through.

Chicken Tortilla Soup?

Freeze the fillings and just eat the guac, sprinkled with cilantro and a squeeze of lime on a spoon like I would????

I second the tortilla soup! My step mom always made taco salad...

you could pretty much make any mexican style dish from those basic ingredients...

Jeez, I never heard of left over tacos...what you have are ones that just haven't been eaten yet.
Sorry I live in SoCal, we just keep eatin' the tacos.
You can make breakfast with them too, mix in some eggs.
How about Chiliquilies?

A taco salad or nachos would be simple and delicious.

I say soup or a hodge podge chili. If you have any teen age boys around you could let them polish off the leftovers in exchange for doing some yard work for you!

I was going to suggest chilaquiles as well. (pronounced chee-la-KEY-lays if you care).

A little more authentic kind of mexican lasagna, or a tortilla casserole that is sublime. Recipes abound but here's the instruction portion of a version from a friend of mine from Mexico:
1 - A layer of tortilla chips
2 - A layer of sauce.
3 - Sour cream
4 - Repeat as desired
5 -Cheese and cilantro on top

Serve with refried beans

So good. You can have them "wet" or "dry" depending on how much sauce you add. You can do enchilada sauce, or just salsa, or even chicken broth and roasted tomatillos or similar. The ratio of how much sauce to chips/meat etc you use, and how long you cook it are a matter of preference. Good luck!

Taco salad, mexican "lasagna", taco bean soup... or just make and freeze burritos. A basic burrito freezes pretty well.

Tex Mex favorite is Migas - scrambled eggs with all the ingredients you've got (Including the taco shells) ! Google them, you'll find plenty of recipes. It's a breakfast delicacy.

when i was in grade school i used to take cold tacos for lunch.

Around here, tacos are often what leftovers turn into.

you can definitely make enchiladas, burritos or tortilla soup... i love the mexican lasagna/casserole idea too. I also make these tortilla/tostada stacks... you might like them.

If you want to steer away from the Mexican theme - you could steer into the Caribbean, go Puerto Rican and use the veggie "meat" with macaroni or serve the soy crumbles over rice with nice sweet plantains on the side. Or even use it for a veggie lasagna.

If you have flour tortillas, bake them or fry them and sprinkle some cinnamon sugar on top for delicious crispas.

You could buy a pizza crust and make mexican pizza - salsa, beans, meat and cheese, bake and topp w/ guac, sour cream, lettuce tomatoes and crumbled chips.
Stuffed tomatoes or pepper - use rice, salsa, meat and top w/ melted cheese.

You can make taco salad- just crunch up some tortilla chips, add leftover taco meat, shredded lettuce (or salad greens- which I happen to prefer), cheese, salsa, sour cream, and whatever other taco fixings you have leftover. It's basically tacos with a fork. It's great to eat at work the next day when you don't want to look like a mess in front of your co-workers...just pack it up in a tupperware bowl to go.
