Leftover pumpkin bread

I made too much pumpkin bread and it's starting to get a little stale. Apart from just toasting it and slathering on lots of butter, how can I use it?

Bread pudding or a trifle maybe. Is it stable enough to become French Toast? Pumpkin Bread French Toast with Spicy Cooked Apples just popped into my head...

How about some kind of dessert Panini? Maybe with cream cheese and some apricot preserves? Or some pear?

First thought: ooh! Pumpkin french toast! Would make a pretty wicked T-day breakfast!

Anyplace you would use a nice bread. Stuffing even. It freezes well.

Toast them and make croutons for wicked different salads or crumble them for crumbs to top desserts. Freeze it till holidays and put it out. But slathering it with butter and or cream cheese sounds like a slice of YUM!!!!

I've been thinking about doing this but haven't tried it yet...

I've seen recipes for "Cake balls" where you basically take cake and combine it with a container of frosting (or make your own), Chill these for a few hours and then melt almond bark (that chocolate coating) and dip the balls in. chill again.

Anyway, I was thinking the other day that it might be fun to make with pumpkin bread, and perhaps combine it with some type of cream cheese frosting. Don't know if it will work, but I figure anything with pumpkin must be delicious!!!

Totally use it in a stuffing! That would be perfect for Thanksgiving...mmm! Freeze it now though so it won't get more stale before you make it.
